Belgian (Liege) Waffles

- This treat is not your average breakfast waffle, its richer and crispier thanks to the wonderful addition of pearl sugar!
The dough is different than the American waffle batter, thanks to the addition of yeast, this is more of a bun and less like a fluffy cake.
I'm so happy with this recipe and could not wait to share, enjoy!

Ingredients:
300g A.P. flour
125g unsalted butter
125ml whole milk
30g sugar
20g fresh yeast
1 large egg
100g sugar pearls
Pinch of salt
1/4 tsp vanilla extract
8x90g balls (waffles)

No but you can freeze the wafles
What's the yeast alternative and the conversion you talked about?
Dry yeast is about half the amount 👍

I haven’t tried this for this recipe, but I know yeast can be forgiving when it comes to freezing but consuming within the next 2-3 days otherwise it will die

I made Liege waffles last night. They were delicious but not as fluffy as the Liege waffles cooked at our local Belgian ice cream parlor (run by a Belgian couple). I'm wondering if she includes some beaton egg whites in the recipe.
Hmm it’s a yeast dough, egg whites would be long deflated after the kneading
But what you can try is resting the dough for a little while once shaped and before cooking like a second proofing
@@BakingNicky I talked to the Belgian lady in the Belgian waffle shop in our town today. She said that my waffle are not as "fluffy" because I'm not including any additional sugar in the dough other than the pearl sugar. I stirred up a batch this afternoon and included sugar in addition to the pearl sugar, but I haven't baked them yet. My dough is in it's first rest so that the batch can double in size. After putting in the pearl sugar, I'll form the waffles and let them rise again prior to the waffle iron as you suggested.

Have you tried Belgium waffles? Theyre just called waffles but do not think that they are the same as a batter-only American waffle 😉
They’re not the same as American waffles. The only similarity is that you cook them on a waffle iron. They are worth the effort (if you can really call it that - they’re not complicated at all), but if you can’t be arsed to do more than a pre-mixed thing then that’s your prerogative and I won’t judge you for it. But if you have a spare couple of hours where you’re bored and feeling experimental, try ‘em! 😊
