Excellent recipe...but mutton galta bahut mushkil se hai...ultimately pressure cook karna padhta hai....yes agar mutton naram ho aur khassi ho to jaldi gal jaata hai...anyways Charsi kadhai mutton looks very delicious...thanka

جس خانساماں کی ایجاد چرسی تکہ تھی ۔۔۔ وہ چرس پینے کا عادی نشئی تھا ۔۔۔ اسکا نام کم لوگ جانتے تھے مگر نشے کی عادت سے سب واقف تھے ۔۔ اسی بنیاد پر لوگ کہتے تھے کہ چرسی کا تکہ کمال کا ھے جو وقت کے ساتھ چرسی کا تکہ سے عرف عام چرسی تکہ اور پھر چرسی کڑاھی میں تبدیل ہو گیا ۔۔۔ یہ مختصر سا بیک گراؤنڈ ھے ۔۔ ایک روایت کے مطابق یہ اس علاقے سے آئی ھے جہاں چرس کا کاروبار عام تھا اور اس کے نشہ کرنے والوں میں سادا انداز میں پکا گوشت کھانے کی روایت ھے ۔۔ کیونکہ بعض کے مطابق چرس پینے والا اگر مٹن کھائے تو نشہ کے برے اثرات زائل ھو جاتے ھیں ۔۔۔
