I tried this way and this method works, thank you..First 40 mins medium heat, we let the meat cook in its own released water...then start adding oil/ghee, once meat is 80% cooked..fry it 10 mins..with garlic, then tomatoes...THANK YOU SIR...What I found, in this method was that fat in meat is allowed to get melted, the bad smell of fat (sheep) gets converted into good smell. This makes it excellent Peshawari Karahi...no spices but green chillies and may be black pepper...
At least you've said bismillah with perfect tajweed, our afzal bhai misses it at the beginning of every video. He needs a proper tajweed class. I also learn like hom as a child and no one corrected it. Now in my tajweed is 50 percent better and still learning in my 50's.

Afzaal BHai! Hope you won't mind! Lekin, it really depends on the Dumba and its Fat (Lam). Those dumbas are fed on dried grass and some sort of seasonal hay. And those dumbas are around 4 to 6 months olds. Maybe 7 months old. And the sakt that they use is lahori namak (sendha namak) not iodized. And lastly Lam (tail fat) is kinda laazmi! (KhamaKhwa in Pashto) Thank You!
