I cook eggs in cast iron virtually every day. Your advice is very sound: pre-heat the pan, add a little cooking fat (I generally use olive oil), add my eggs and have a satisfying breakfast.
After cooking, I rinse with hot water, dry with paper towels, put back on the heat and add about 1/4 teaspoon of my homemade seasoning paste, rub all over, wipe off excess, turn off the burner and let the pan sit until the next day. I also enjoy using my vintage cast iron skillets. I have some modern Lodge skillets, which are great, but I love cooking with skillets manufactured before my grandparents were born.

Fantastic video, thank you. It's the first video from your channel that I've seen. I'm from England and am well impressed that an American has an English AGA oven. They are amazing ovens and definitely kitchen jewellery.

I never saw someone scramble the egg in the pan before.
I also fry my eggs in my grandma’s old pans. 😊

I cook with cast iron, and agree with most u said, after washing your cast fry pan make sure its dry, you can heat it on the stove to make sure , and always coat it with a thin layer of cooking oil , remove excess to prevent any rust before storing. And if you use it for everything, do exactly what you have exsplained. good video,

I use stainless steel chain mail to clean the sticky bits off cast iron pans. If the pan is still a little hot, it does not need much pressure. If the pan is well seasoned, this should not scrape that off. I am trying to avoid plastics (to the extent possible) in my everyday life.

How about tallow for seasoning? I can’t seem to get it to stay seasoned for some reason.

Hey Eric! It’s called an AGA - they are solid cast iron and made in the UK. And it actually runs on gas. We love it! If you head to our channel we did a review video of it and what we love about it. Or here’s a link: AGA Stove Review | Traditional Cooking | Farmhouse Kitchen Oven | AGA Cooker Review 2022

What do you cook acidic things in?

My preference is enameled cast iron but I also have some larger stainless steel pans or sauce pans that I’ll use for acidic things!
