Incredibly Rich Oreo Cheesecake WITHOUT Using a Water Bath

    Ingredients
    Oreo Crust
    35 Oreo cookies
    5 Tablespoons unsalted butter, melted (75g)
    For Cheesecake
    15 Oreo cookies
    32 oz cream cheese, softened (use full-fat brick-style cream cheese) (907g)
    1 cup granulated sugar (200g)
    ¾ cup sour cream (180g)
    1 teaspoon vanilla extract
    4 large eggs, lightly beaten (room temperature preferred)
    Ganache (optional)
    3 oz chocolate (use semisweet chocolate chips or a finely chopped semisweet baking bar) (85g)
    ½ cup heavy cream (118ml)

    Instructions
    00:00 Introduction
    Oreo Crust
    00:20 Preheat oven to 325F (160C).
    00:27 Twist apart the 35 Oreo cookies, use a butter knife to scrape out the filling (discard the filling) and toss cookies into the basin of a food processor.
    01:33 Pulse until cookies are ground into fine crumbs.
    01:51 Combine cookie crumbs and melted butter in a large bowl and toss together until all crumbs are moistened. Press crumbs evenly into the bottom and up the sides of 9” springform pan (go as high up the pan as you can, this will help prevent cracks!). I like to use a glass to help with this. Set aside while you prepare cheesecake filling (you do not need to bake the crust on its own).
    Oreo Cheesecake Filling
    02:55 Place 15 Oreo cookies in a large Ziploc bag and use a rolling pin to smack them repeatedly until cookies are broken up into coarse pieces (don’t break too small or grind too fine you want substantial cookie pieces in your cheesecake!). Set aside.
    03:35 In a large mixing bowl or the bowl of a stand mixer, combine cream cheese and sugar. Use an electric mixer (or stand mixer) to beat on medium-low speed until cream cheese and sugar are completely combined and no lumps remain (scrape sides and bottom of the bowl to ensure no lumps).
    04:35 With mixer on low-speed, stir in sour cream and vanilla extract until completely combined and batter is smooth.
    04:46 Add eggs one at a time, stirring until just-combined after each addition (eggs should be well combined, but don’t overbeat or the texture of the cheesecake could be affected). Scrape sides and bottom of bowl to ensure all ingredients are well incorporated.
    05:38 Use a spatula to fold in Oreo pieces.
    05:48 Pour batter into prepared springform pan and use a spatula to smooth the surface.
    06:10 Place cheesecake on a foil lined baking sheet and transfer to the center rack of 326F (160C) oven and bake for 45-55 minutes. Center should be set but spring back lightly to the touch and if jostled the center will slightly jiggle like set jello but should not be liquidy. The very edges of the cheesecake may be turning a very faint brown or very slightly cracking when the cheesecake is finished.
    06:18 Remove cheesecake from oven and if any of the cheesecake filling is touching the springform pan and isn’t enclosed by the crust, use a sharp knife to gently loosen it (this will prevent cracks as the cheesecake settles). Allow cheesecake to cool for about an hour at room temperature, then transfer to refrigerator to chill for at least 6 hours, preferably overnight.
    Chocolate Ganache
    07:17 Once cheesecake is set, prepare ganache. Place chocolate in a heatproof bowl and set aside.
    07:39 Pour cream into a small saucepan and heat over medium heat until it just begins to simmer. Immediately drizzle over chocolate, cover bowl with foil, and let sit for 5 minutes. After 5 minutes, gently stir with a whisk until chocolate is completely melted and ganache is smooth.
    08:12 Drizzle ganache evenly over cheesecake.
    08:25 Return cheesecake to refrigerator and allow ganache to set before slicing and serving (about 20 minutes). If desired, pipe half a batch of homemade whipped cream over top of firm ganache cheesecake before serving (I piped the whipped cream on top of my cheesecake using an Ateco 848 tip).

    Store in the refrigerator for up to 5 days. Cheesecake may also be tightly wrapped and frozen for several months.

    hi Sam! I turned this into 24 mini cheesecakes using an oreo cookie as the bottom crust, and they turned out spectacular!     Just love your recipes. You are soooooooo talented. Soooooooo soooooooo talented. Coming up with such yummy ideas for us. Just wanted to say Thank you before I make this recipe this weekend before my package of cookies goes bad. My grandkids haven't been coming over so they haven't been eaten so remembered you made this went to get the recipe to write it down I am old so write all my recipes down I don't even have a computer or anything else besides my phone. Can't wait to make it for my youngest daughter's family Just because they have helped me out several times throughout this month and before.     I love that you use your hand mixer in a lot of recipes and just finish by gently stirring/scraping, and you explain why. It makes perfect sense.

    One Q: I noticed you didn’t use parchment or grease the bottom of springform pan. So many others cut a round bottom and then attach sides. Is that necessary? Thx!

    This looks AMAZING! I can’t wait to make this. Also, if you wanna save yourself some labor on the crust, Nabisco makes chocolate wafers you could sub for Oreos. That way you don’t have to scrape out the filling. I’ve used those wafers in a crumb crust before just fine

      That would work but this is an Oreo cheesecake and would take away some of the Oreo part. 😊

      They sell Oreo crumbs here in Canada (and have for many years), just like graham crumbs. I couldn't be bothered scraping the filling off and crunching them up myself. Don't they sell the boxes of Oreo crumbs in the US?

    Beautiful demo! But how do you separate the cheese cake from that metal bottom plate? I hate using the knife. Would parchment paper work?

      You could certainly line the pan with parchment paper. I also will use a pie server utensil to slide it out sometimes. 😊

    Hi Sam if I were making this cake to give away to someone can i put a cardboard round at the bottom of the pan so in that way I dont have to give away the bottom of my pan?

      Just put a parchment round in your pan and then you can slide it over to a cardboard round :)

    If you are making this in 2024 you no longer have to scrape the cream off the oreos as thanks to shrinkflation there is hardly any cream filling in them. Sam had way more in her bowl than I did. If you are making this get a pack of regular and double stuff. Use regular for the crust and double stuff in the cake

    I'm just now making your recipe and have 2 comments on it.
    First, that it's very easy to put together IF you don't use your stand mixer! I realized WHY when I added that 1st egg. Sheesh. I was already having doubts when I added the sour cream, because I forgot to add the sugar (I was using caster) and the sour cream with the slightly cool sour cream, and they were NOT cooperating. It took me AGES to scrape the sort-of-creamed melded ingredients off the paddle. I've now stirred in the eggs and caster sugar into a, mostly, homogenous batter.
    However, that brings me to my 2nd issue: I've never made a cheesecake without an electric beater, and my stand mixer is the 6-qt one, so I'm doing this by hand. I have LOTS of small lumps of cream cheese and tiny bubbles. Have I overbeaten my batter?! 😢
    This is mostly my grandson's project (he's 11 and wanting to get better in the kitchen: yay! 🎉) but I'm doing the heavy lifting for now, however I'm more proficient at baking bread and regular cakes. Any ideas for me? I'll take any suggestions from anyone who's made this cheesecake, or any other recipe, and it'll be most appreciated!! ❤❤❤

      It may have been over-mixed if there are lots of air bubbles. :( Was your cream cheese at room temperature? That's the best way to try to stop lumps from forming. :(

    I’ve already made this several times and it’s always a huge hit but the one thing that irritates me is that no matter how thick or high I make the crust the cheesecake still goes through crust as if the crust absorbs it all. My crust never stays really black.

    Hi Sam, since you aren't using the cream filling of the oreos, would it not just be simpler to use Nabisco's famous wafers?
    I'm a big fan of your channel and love the reoccurring "sad stand mixer" gag.

      You could if you’d like, but I use the Oreos because it helps complete the Oreo part of the cheesecake, plus I like to eat the fillings. 🤣🤣

    To eliminate the need to scrape the cookies you could follow the original Philadelphia Cream Cheese recipe which calls for less cookies and butter in the crust plus it doesn’t require you to put so much up the side. Without the filling of the Oreo cookies, it's just a chocolate wafter Cheesecake.

      I tried with fewer cookies and less butter and still ran into the issue. Its still Oreo cookies in the crust and the cream is still in the cheesecake so I think it still counts 😊
