In Chile, there's an old saying meaning "don't go overboard with...": "Bueno es el cilantro, pero no tanto" - "Cilantro is good, but not that much/but so much isn't." Double meaning, quite appropriate for those yucky noodles.

You can balance too much cilantro with garlic, but it’s still a strong taste. We make sofrito to be used as a starter in most of our cultural dishes and it contains tons of cilantro. Needs balance of other ingredients to really work.

I’m glad I have half-Indian genetics because I love cilantro. Since it’s a genetic preference (the whole “soapy” thing) I got lucky. Cilantro is used pretty often in Indian cuisine because that gene is pretty rare there.
Cilantro doesn’t taste soapy to me, which probably just means I have the right genetics. It just tastes wrong in almost any food I’ve tried that includes it. Supposedly if you’re in my situation and spend a few weeks in Vietnam never doing your own cooking, almost everything you eat will have some cilantro in it and you’ll get used to it, even come to like it in certain dishes. Cilantro isn’t native to the New World (it’s coriander leaf, though there are varieties to coriander bred for better leaf production than seed production), and in some dishes it seems to be a substitute for the native papalo (Porophyllum ruderale), which I think tastes similar but better.
For a brief time there was a cilantro restaurant in Morioka. Don’t know if it just closed for renos and is open again but it was gone last time I was there. Was really good though.
My Japanese friend when I told her I was making a Mexican food and put Cilantro in it, she was beyond shocked it almost sounded like she was offended and I now understand why 😂😅

I feel like adding some vinegar and Korean chili flakes (gochugaru) infused in hot oil would make it at least semi palatable? or some chili garlic sauce (Lao Gan Ma or chili crisp) instead. Cilantro goes really well with chili and vinegar for some reason. IDK but it was my summer food obsession in 2024. It was reminiscent of a Thai salad. This could actually work for this instant noodle. Just saying.
