This is very insteresting because we also got similar sour fermented fish in northeastern Thailand. The process of making it is almost identical, except it is not fermented as long and we deep fried it until it is crispy outside. Its called Pla som (pla = fish and som = sour in Isan language).

How about eating it with Ochazuke? Ochazuke is a traditional Japanese dish that involves pouring dashi (a Japanese broth) over cooked rice!! It also reduces the sourness and I think it will taste a little better…😅

No, it doesn't!! Mainly using just rice to preserve.
It would be the lactic acid produced in the fermentation process that makes it so sour.
