The All Ireland is a step away from a Irish Boilermaker (no cider), but you drop the shot into a 1/2 pint not a whole, and you down it before it curdles. Not unlike a Cement Mixer shot. BTW the 1/2 Guinness 1/2cider is called a snakebite. So essentially the All Ireland is a Snakebite with a Baileys/Jameson drop.

To prevent browning apples, store slices in a solution of 2.5 g salt to 240 ml water (1/2 tsp to 1 cup) for ten minutes, rinse with fresh water, pat dry (or not) and it'll be good for a few hours

Here in Ontario, Canada, there is an Irish pub/restaurant that serves a drink they call a "Black and Tan", which looks like your "All-Ireland". Harp lager with a layer of Guinness above it. I've had them and liked them.

Guinness and Harp is usually called a Half and Half (also used for a bitter and mild in England), while another lager like Bass would be a B&T, as the former are both Irish and avoids the latter's connotations. Guinness and cider is a Snakebite or a Poor Man's Black Velvet (a black velvet is stout and champagne), although when I visited England they didn't layer a Snakebite.

Also: Pro tip, Seán: Freshly squeezed lemon onto apple slices prevents them from oxidizing (turning brown). 😁

The last one reminds me of a drink here in Austria, we call "Carbomb". But for that you only take half a pint of guiness to drop the Bayley's shot in. You then have to down it in one sip to stop the Bayley's from curdling into little cream curds

HAHAHA. Guys you have to sink it and then POUND it! Sean may have come up with the all Ireland, but in America we skip the cider and call those Irish "vehicle explosives". And you HAVE to drain the beer as fast as you can or that Baileys will turn all funky, lol.

I was JUST coming here to say this! I usually had mine with a half pint instead of a full pint. You have to drink it fast before the Baileys curdles. Done right it tastes like a milkshake. I haven't had one for a while since the name makes me shy about ordering it, especially in an Irish pub.

That's not bruising on the apple slices. It's oxidation. Some varieties, like golden delicious and pink lady, don't oxidize as quickly, but if you used those you wouldn't be able to call the drink a Sean Bean Smith.
