EASY Slow Cooker Orange Chipotle Chicken.

  • In today's video, Jill shows you how to make an easy, orangey, and slightly smoky smoky chicken dish in the slow cooker. Just add cooked rice and you've got yourself a pretty yummy entree.

    Jill’s Orange Chipotle Chicken (February, 24, 2024)
    3/4 cup thawed orange juice concentrate
    1/3 cup barbecue sauce
    1 chipotle pepper in adobo sauce
    1/4 teaspoon salt
    1/4 teaspoon garlic powder
    3 large boneless skinless chicken breast halves** (You could add six smaller breasts if larger ones were not available.)
    1/2 cup sliced onion
    1 ½ tablespoons cornstarch
    4 tablespoons cold water
    Place the orange juice concentrate, BBQ sauce, and chipotle pepper in a blender (or use an immersion blender as I did), cover and process until blended and the pepper is chopped up well.
    Add the chicken breasts in a slow cooker. Sprinkle on garlic powder, pepper, and salt. top with juice mixture. Top with the sliced onions. Cook, covered, on low until a thermometer inserted in chicken reads at least 165°, approximately four hours.
    About an hour before the chicken is done, mix the corn starch and water. Add to the slow cooker and stir in the sauce (this will thicken the sauce).
    That’s it! Serve with rice or noodles. DELICIOUS!
    **This recipe would be awesome with chicken thighs/and or legs.
    Note: If you wanted to really spice it up, add two chipotle peppers to the recipe instead of one.

    I've never cooked with chipotle peppers. Are they spicy? I'm going to have to give this one a try. Thanks Jill!

      Everyone has different preferences with spice/heat. I categorize Chipotles as being medium heat. Chipotles have more heat than canned green chilies and are similar to Jalapenos. Chipotles are much more flavorful than Jalapenos in my opinion--I am partial to red chilies over green. If you do a search for "chili pepper list hot" you will find a site pepperscale that will help you compare chilies to gauge the heat.

      It's really a nice pepper. Very smokey flavored, and it's got a kick. If you are not a "heat" fan, I'd not recommend it. Thanks for watching

      It's very smoky in flavor. Very spicy. Not terribly hot.
