Perfectly Flat Fried Basil Garnish

- This is a super simply method of frying herbs to keep them perfectly flat and completely in tact using equipment you have at home. For these flat fried herbs, I used basil but you can use tons of other herbs like parsley, sage, even baby kale. They are a great garnish for all sorts of dishes that not only add colour and interest but also crunch which is a great way of adding texture. I'm not one for adding something to a plate that you can't eat and enjoy so these are really one of those garnishes that doubles as an important textural and flavour element of a plate. All you need is some oil, herbs and a microwave and you can make these at home or at the restaurant.
When traditionally frying herbs they tend to curl under and can often break apart in the fryer which can be quite intense for such delicate leaves. This is a great way to make sure that doesn't happen and will give you perfectly flat, whole leaves every time. To store these simply place them in an airtight container at room temperature and store the leaves flat between two pieces of absorbent paper towel. This will continue to help absorb any extra oil that is left in the basil, sage or kale and make sure that the leaves don't go soggy before you use them.
Note: I learned how to make these from one of my old culinary teachers but the technique originally comes from Chef Heston Blumenthal of The Fat Duck. While recipes and techniques are meant to be shared and enjoyed by everyone with recipes such as these that are so original and unique I always try to give credit where credit is due.
Check out the twitter and instagram, I'm finally using the social mediasssss. @kaccreative on both!
Yay! A cooking video lol! Finally back at it and trying to get back into the three videos per week swing of things. Hope you enjoy this recipe, you can use this technique with other herbs as well as things like baby kale and it works the same. Also I got me the ol' social medias for this channel, check out @kaccreative on twitter and insta.
KAC Creative amazing! Thanks for the content chef 👩🍳
Thanks so much for the support Paul!
Found your channel and love it !!

I made these basil chips this week to go on a strawberry, beet, balsamic vinegar and basil tart. I have to say it was super easy, quick, very beautiful and tasteful. I wish I could post a picture with my comment because it helped make my tart go from not bad to elegant. My coworkers loved it and many of them asked how I did it. A real win! Thank you Chef!
Awesome! I'm so glad to hear that!
This is just perfect. Pretty and so easy to make. Thanks
Thanks for the new technique about Basel dried leaves.
So simple but pretty I can’t wait to use this on a fancy meal one day x
Thanks for sharing your secrets! helps a lot!
Oh sick! Can't wait for all the new video's! I'm really looking forward to them!

buena decoración y fácil de hacer. :)
Wow!! I HAVE to do this! 😍
Yummy 😋 I Love basil
always learn something new from you~~Thank you chef!
Haha thank you ☺️
Hi friend I'm a hotelier. All your videos are mind blowing. Easy to learn process
Although these look great, when I made my own it didn't taste particularly pleasant. This could be down to the basil itself, of course. But I found a tiny sprinkling of sea salt afterwards helped bring out the flavour. Next time I do these I'm gonna add some sea salt after the oil and see what the results are like. 😊
Edit: this works with sage, too. However, I lightly seasoned the leaves with salt before cooking and then again on the kitchen towel. Tasted great! 😁
really nice! thanks a lot!
Perfect !!!!!
Perfect 👌
This is cool!
Thank you!
Amazing
😊🙏
wow,thank you.
Good video 👌
.
So are they flat because they're coated in a bit of the plastic film after microwaving?
Nice video 👌
Good video
I like it
Nice video
Nice video good ❤️❤️
Nice 👌🏼
Awesome! Can it be done with mint leaves
Funny how this is coming from the 90’s, it’s like meeting an old forgoten friend. The micowave time!!
Nice
Does it taste good? I've been working on refining a chicken parmigiana recipe, and today an idea struck me to add some deepfried basil leaves as a garnish. I've not tried it yet, although this appears to be exactly what I've been looking for. Greay video, chef! 😉
Woww
I wanted to make these for a dinner on Saturday, can I do them in advance and store in an airtight box? Or will they wilt? Any tips appreciated 🙏
NIce!

I do!, I do!
Me, mister.
Is there a reason for canola oil instead of other oils ?
Can i do it with mint leafs?
Your content is amazing thanks for sharing, From where do you get inspired?
Thank you! A lot of my inspiration comes from working in restaurants for the past ten or so years, I also read a lot of cookbooks and love looking at what chefs I admire are working on via instagram and such :)
what can you use instead of microwave?
is there a way to do this in a regular oven?
on what dishes you can use them, chef?
Hello! First I want to thank you for this amazing chanel of yours and second, I would like to ask you if this technique could be used on rose petals or other flowers. Also, if it can't be used on them, what would you recommend in doing some rose petals like this? Thank you!!
Thanks for the awesome compliment! Hmm i think maybe for flower petals I’d soak them in a simple syrup and then dehydrate them at a really low temperature? That would be my best guess but flower petals are so delicate it might be tricky! Dm me if you try it and it works!
@@ChefStudioChannel I will try it for sure and tell you about the results! Thank you!
@@carlosenrique3802 Did it work?
Does this work with other herbs, e.g tarragon ?
does it have to be canola oil?
Your videos are as dope mate ! Amazing ,just Gold
Can be anything with a high smoke point! And thank you so much! Glad you like the content :)
blackowave magic
bonjour combien de minute au micro onde merci
y el plastico no se derrite?
This looks so beautiful! Thank you chef! But I have a question what do I do if I don't have a microwave?
Than buy one😖
No microwave in the kitchen is good thing.
Fry them in fryer at 170°C for 2-3 minutes.
Try dredging them in oil, placing them between two sheets of parchment paper, and then sandwiching that between two sheet pans before putting them in the oven. It works for getting super crisp and uniform bacon crisps, so I assume it should work for herbs
does this retain the basil flavour, i was thinking of adding this to a twist to a burrata with balsamic pearls
What temperatures should I set the microwave oven
Es posible que encuentren un poco de albahaca en el Bisfenol A que has preparado
Una pregunta como para que o en que se usaría?
Which mode on your microwave? Can you answer me pls :)
....great all the Biosphenol is on those leafs.
Can i do that with oven???
is there another way to do it without using the microwave?
Can i use oven instead?
What kind of plastic wrap do you use? Every kind I tried melted in the parts that came in contact with the oil.
Hey there, sorry to hear that! I just use the yellow no name brand at home and then the brand (not sure the name) that comes in to the restaurant from Sysco. Hmm. Maybe see if you can fiddle with the microwave strength?
Hmmm, I'll try again. Thanks.
BTW, the brand name for the stuff from Sysco is usually... Sysco. LOL.
Melting isn't the issue. You should not be recommending to people that they cook food in plastic wrap. That is incredibly toxic, especially with the use of oil in the process. Leaching, the diffusion of chemical toxins from the plastic into the food, is well known to be accelerated through fats and heat. Any non food grade plastic (and even those) when heated to certain temperatures (unless through incineration, around 1000c) will leach toxins, specifically dibenzofurans/dioxins and potentially also diethylhexyl adipate (an endocrine disruptor linked to breast cancer in women and reduced sperm count in men).
Croweykid _
They do make plastics that solve that problem you know and many of these are used to make plastic wraps
Food grade shit that withstands high fucking heat
Yo lo intenté hacer pero el microondas echaba chispas... como lo soluciono?
Can i do the same thing with olive oil or sunflower seed oil?
Olive oil goes a bit funny or at least I find it does when it’s heated like this but sunflower would be fine!
I tried olive oil and the result is very similar to yours. I will also try with the sunflower one. Thanks so much :)
Can this be done in oven
can we use normal oil??
Can I used any kind of vegetable oil ?
Yep!
Is that a crispy one? Answer me please 🥺
love this! is there alternative way if i don't own microwave?
Unfortunately I think a lot of the science behind this and why it works has to do with how the water molecules bounce around the microwave so I don’t know of an alternative way to do this and get the same results.
KAC Creative awh okay. Thought of doing this for my examination, but too bad we don't own any microwave in our kitchen :( but thanks anyway for responding!
Sorry about that! Good lick on your exam girly!
zer I used to fried it.
Polietileno+grasas+microondas= carcinógenos organohalogenados.
What type of plastic wrap are you using and is it safe and does it affect the taste because I’ve microwaved plastic wrap on accident before and it melted on top of the food and a lil taste of fish tasted overwhelmingly wrong and it was only a min in the microwave
* a littel taste of the dish
How do we eat this?
Can we use olive oil maybe instead? Dont prefer the taste of Canola.
Kabir Verma
It is not limited by type of oil fuck around with that all you want
Can i replace canola with other oil?
Did you try another oil? I'm guessing it would be OK as heat higher than the smoke point would just destroy these. I just tried at 2:30 and melted the plastic together. I"m thinking sub 1:00 next time.
Can I use soya oil instead?
Yep! :)
Chef mike
✌️
Does it works for a cocktail garnish, let's say for a Basil Smash? Is it eatable?? Thank you and congrats for the video, very nice idea 👏👏
I wouldnt recommend it.. might be too greasy. If you put the basil leaves in simple syrup then dehydrate them that would prob be more appropriate for a drink (would look the same but be sweet)
I read that microwavable plastic wrap should not touch food when microwaving?
😱u could put it on a dessert instead of mint stay thisty my friends
Isn't it toxic when the basil leaves are heated up with plastic wrapping in the microwave oven?
I completely agree. The use of plastic is out of control in many aspects of our lives and a lot of people in the culinary world are ignoring basic health rules like cooking with plastic like sous vide and cooking food in plastic wrap.
Yes, it is. It potentially releases BPA among other things. Plastic wrap is not intended to for cooking purposes, and so there is no regulation as to the type of chemicals used in its production that will inevitably leach out when it's heated.
Chenjun Yang
There are plenty of sources that address that problem and explain how to solve it all you have to do is fucking look
And canola oil 😂
حق همسایه
But is it crunchy tho
canola oil is harmful for healthy?
Olive oil is generally much healthier. Canola oil is cheaper. Sunflower or avocado oil are more low-key & don't obscure the basil flavor like olive oil. However, the more salient issue is that no one should be cooking with plastic wrap like this if they want to reduce their cancer risk.
Is he a UA-camr or a God??
Hahaha *she 😉
You should mention the temperature 😢
My plastic wrap melted into the basil
Try turning the power down by half!!
Ryan Boucher
They make plastic wrap designed to withstand high heat you might wanna find that
I didn’t know Samsung microwaves existed!!!

My nigga
i Fully burned through the plastic
microwave + plastic = Delicius Food
Old school
@@andreslopez6637 i do
Could someone please explain the science behind this?
The microwave uses the oil to fry the basil while the two layers of plastic wrap keep them flat.
😂😂😂
"fried" ... okay
Considering that the term fried denotes something in oil at high temperatures it's correct to say it is "frying" the microwave is isolating and stimulating those fat and water molecules and the maillard reaction is doing it's thing. It's a strange and unique method but it's not wrong.
ruukusanla ... fair point, thank you
Lol the rich get rich by selling you this.
