    What is that tool with the point that I imagine is set to penetrate to final, or near final thickness? Is the idea that you plane until the holes made by the point disappear when final thickness is achieved? I've never seen this anywhere else, but it seems like a great idea, and avoids having to continuously pick up the plate and measure thickness with a thickness gage. Bravo.

      That's called a Stradivarian thickness punch. I've seen it used by violin makers and more recently by Ken Parker on his channel. The use is like you described - punch some holes, plane/scrape until the holes are gone.
