There's a reason why it's expensive. Don't know why, go buy a brisket, trim it, cook it, see what the finished product costs you. Majority of restaurants try to run at about 30% food cost. If that plate costs you $10 to make and plate, you're gonna charge $30 for it. There's a reason why they are that busy. One, it's good. Two, Texas monthly rankings. Is there better BBQ off the beaten path, probably. That's the great thing about BBQ

One thing I will not do is wait in a line more than an hour at any place, I don't care how good the food is supposed to be, especially if I got to the counter & they are sold out/86'd, I'd snap & go off postal, only wait that long if it was like the 1930's depression soup lines & that was all there was to eat, but my family is from rural Kentucky & we know how to hunt, & will eat about anything( no skunks, lol) every other ground animal is fair game most folks would not eat unless they had to, plus wild greens, mushrooms, & we have a garden, taters,turnips,carrots,beets, etc...

Ok peeps i need help. I'm traveling to Austin from S Illinois just for bbq this week. Obviously, Franklin's will be my 1st stop. I need some recommendations for other good bbq joints in Austin. Thank you.
I was there this Sunday. Arrived at 8am, was approx #25 in line. Doors open at 11am. Food was in hand about 11:45. I would recommend getting there earlier 8am or before. The line is fun between 8 and 11. They give you chairs and it's a fun time. It's not like waiting in a line, it's more like hanging out for 3 hours talking about BBQ. You can leave the line and not lose your place if you establish your spot with the chair they give you. They actually encourage people to leave the line, come inside, buy merch, buy beer, etc. The "wait" was a lot of fun. Now if you are far back in line because you didn't show up until 9am, you're not going to have as good of an experience, because you will be standing longer waiting for food after they open at 11am. Because at about 10:50 they take the chairs and people stand in line. So if you are far back in line, you'll be waiting a lot longer for the food to actually be in your hands. You want to be the first 30 people in line ideally.
People here are commenting that the brisket and turkey looks greasy. Well, that's because the brisket is slathered with beef tallow when it is wrapped and the turkey is dunked in melted butter. Franklin don't care about your arteries, just the money in your wallet.

I agree as far as brisket goes. I put Franklin #1. Terry Black's is a close #2. Terry Black's is way more accessible though. Like 10 people in line when I went a couple of weeks ago.

It’s expensive but sooo worth it. Best brisket I’ve ever had in my life. For two people, we spent $120 and it was worth every penny.
