Wax paper will slow the drying process. Lots of people just use newspaper but I prefer a rack like is used to cool cookies. Just want to be careful about the roe sticking to whatever it's drying on which is the problem with paper towels.
A common mistake is to freeze uncured roe. If you freeze fresh roe in a regular freezer the water inside the cells of the egg will expand and burst turning your eggs to mush. Fresh roe must be flash frozen. Best to cure before freezing.
These eggs are sorted so they are only the smaller berries which make the best eggs. They fish better and don't need to be butterflied. It's only necessary to cut large berry eggs like mature king eggs and those don't fish as well as these.

They firm up well. Just give them enough drying time which will vary depending on humidity.

Except closer to the ocean, you want to add sugar to that fuze cure.
Or, use the original Pro Cure. The Tillamook blend is another good option.
How about adding borax before they dry?
If you're starting with fresh eggs or doing a wet cure. These eggs are already cured so I'm just wanting to dry them a little more.
