  • In France the cake I miss most is the strawberry shortcake. Having said that, you can get your hands on strawberries pretty much everywhere. So let's enjoy this japanese shortcake at home! Give it a try!

    Ingredients (in a 15cm cake mold) :
    - 3 eggs
    - 10g unsalted butter
    - 15g heavy cream
    - 70g cake flour
    - 80g sugar
    - 5 to 6g glucose syrup
    - 380g heavy cream
    - 38g sugar
    - 1 tsp cremfix (if your cream has less than 35% fat)
    For the syrup
    - 2 tbsp sugar + 2 tbsp water

    Can I omit the glucose syrup?
