    This is one of my favorite things to make but I hadn't made it in a while and never wrote down the ingredients. I tried to use the link in the description, but I think the recipe was taken down for some reason. I managed to find an archive of the recipe so I thought I would put in here in case anyone else has the same issue.
    1kg pork belly, cut in to small diced pieces.
    2 tbsp vegetable oil
    4 Dried Shiitake mushroom, soaked and cut into cubes
    2tbsp Fried Shallots
    2tbsp Fried Garlic
    1.5 tbsp Light soy Sauce
    1-2 tsp Dark Soy Sauce
    500ml Rice Wine
    500ml - water (to top up)
    50g Rock Sugar, Crushed
    2 tsp white pepper
    1 tbsp 5 spice
    1 Spring Onion, Whites finely chop, green cut in an angle for garnish.

    What food makes me miss home? Haggis. I`d love to see you try to cook something with haggis 🤣 We do have haggis pakora these days though.

      haggis pakora is the business. First time i tried that was at the Bothy in Glasgow, who alas, removed it from the menu. They do still have a right good Cullen Skink, however.

    Looks really tasty. When using less rice wine, whats the best substitution for it?

      I can't get rice wine where I live, would love a good substitute for it.

      i'd suggest a combination of apple or white grape juice diluted with water and some white vinegar (preferably rice vinegar (all to taste)) - that's if you want an alcohol free version. If you're ok with cooking with alcohol, you can sub for a light japanese mirin, or if you have no access to asian booze then try a dry sherry (but again, water it down a bit and adjust to taste. Hope that helps.
