They pretty much did. There's a scene where they just load programs into Neo all night long. I don't know what the canonical explanation is for why they don't just load all information in the universe into everyone, but logically there's a limit to how much you can cram into a brain. So knowledge is probably loaded in only when potentially useful or specifically desired.

I always wondered if, when they had information downloaded, they had it in the real world or just in The Matrix. Because if they could just instantly learn anything, why wouldn't every person in Zion know everything and all be able to build way better defense and shit?
yeah, they only knew how to do that stuff in the matrix.... them “performing” the things they “learned” was just as simulated as anything else in there. thats why it was so cool in the third matrix movie when Neo went blind and had to relearn how to walk & maneuver around stuff in real life, and in the process figured out how to access his matrix brain skills in real life by recontextualizing his whole reality, buddhist-enlightenment-style

I mean... that wouldn't really work.
The "I know kung fu" scene (and the Morpheus v Neo fight) took place after Tank spent 10 straight hours uploading programs into Neo's brain. Then Morpheus had him launch the Jump Program. And then Tank and Neo had to rest, because it had taken too much out of both of them.
When he woke up, Neo was put into the Agent Training program (Woman in Red), and then the Nebuchadnezzar was attacked by Sentinels. Shortly thereafter, they are betrayed by Cipher, leading to the capture of Morpheus and Neo's rebirth as The One.
This all happens in the course of two days, and at this point, Neo doesn't need any further combat programs, because he's gotten to the point that he can completely break reality.
What if he just decides to absorb knowledge of entire internet into himself?

It took him 10 hours to learn Kung Fu to be proficient. He can certainly try, but, given the fact that the entire film series takes place over the course of a few months, at most, I don't think it's very likely.
This is like all these isekai anime/manga where the hero takes a bunch of random "useless" skills but ends up being broken and super powered

Combine the techs from INCEPTION and the MATRIX, not only will not need traditional schooling, but you can gain experience use of a downloaded skill almost instantly. In fact, also add the tech from that Bruce Willis movie called SURROGATES, and you would have the perfect world.
