    We're also big fans of Golden Promise for NEIPAs. I wonder if the Marmite bitterness is some hop burn, and another week or two of cold conditioning in the keg will sort it out and you'll get the juice to come forward. I know it's heresy but I find a lot of hazy bois really hit their stride with a month of cold conditioning.

    I love a NEIPA .Lucky enough to have received 2 in 2 weeks ,one from Mathew Callaby ( brewboy Callaby ) on UA-cam and one from Fraz Penman of UA-cam official Facebook fame. I’ve never brewed one I definitely need equipment to pressure transfer first and sort out my water profile better ( although coming along ) great looking and sounding beer. Another proper quality episode cheers 👍🍻

    I appreciate the content. Too fancy for me. I don’t even differentiate. I just make beer. Ok fine, I do differentiate a little, my next brew day is going to be a beer modeled by Ceara Madre grain bill. 10lb 2 row and 1lb 60 malt American ale yeast, and whatever hops I’m growing in my garden, I don’t remember what. I brew in about 2 weeks. It will be about 2 months till I taste it.

      Everyones way of making beer is totally valid! Some people go all out with measuring etc. other people more rustic homebrew almost!

    Great vid as always. How are you holding temp for your hopstand, do you use the RIMS or risk the 3kw on the inkbird?

      Thanks! Just risked the Inkbird tbh, its +-2.5C ish and imo 77.5 - 82.5C isn't going to affect the flavour/aroma at all really!

      Thanks man! Gotta admit i couldn’t really say which was better, both had qualities that were really good and all in different ways. Verdant was way smoother, but lacked the nice strawberry fruit of this one

    This is hilarious that you went with a neipa for a 'dark' - so many dark ales and lagers out there but you just ignored that fairly key word. Onto the neipa though, would you change anything if you brewed it again? Did the hops eventually get up above the yeast sludge? Next time would you drop the yeast into the container, disconnect it, clean it, then dry hop? I notice in your transfer video we couldn't see the yeast container :P Also, don't forget that all the hops you whirlpool with, their oils have a chance of biotransformation too. Maybe load up the whirlpool a bit more, reduce that first dry hop, soft crash to 13c, drop the yeast and then do the last dry hop.

      That was mainly just from having brewed too many dark ales and lagers recently and just needed something different and lighter haha, dark in a sense of not clear could work ;)
      Hops dissolved fine in the sludge, it took a bit of time, but they did rise above, it helped that there was a pressure difference with the pressure higher in the collection jar which meant once everything somewhat settled the collection jar contents did get launched into the main fermentation chamber
      Only thing I’d change I think realistically is getting rid of the bittering addition as I don’t think that was required

    Looks oxidized but I could be wrong I wouldn’t go as high as 10% for the adjucts.and I wouldn’t dryhop during biotransformation it actually reduces the haze. Dryhop once fermentation is complete dump the yeast then do so.I think the verdant neipa you did was magnificent this not so much.

      Maybe very slightly, although not sure why as I was better with looking after oxygen this time round. Adjuncts I was happy with, gave much more mouthfeel than the even sharks need water imo!

      If you’re worried about body and mouthfeel you can always mash at a higher temp around 156 f or 69c in your case.

      Really was!
      You know I thought it might be, but it has been in the keg for a good 3 weeks now since serving and while there was initial hop bite it has gone down since, I reckon it’s just extra bitterness extraction from the sheer volume!

    Das a lot o hops! Love the idea of going for more strawberry citrus flavors in a NEIPA, I bet this would be really fantastic with the bitterness dialed in. Cheers!

      Absolutely! Tropical is great and all but I feel like everyone leaves towards that, the strawberry of the Callista was absolutely incredible imo!

    I'd actually want to try this, though in my case I'd be worried that I wouldn't be able to handle the bitterness that comes from using hops in the degree used here. Still, A very good video. Nice Job!

      Yeah we did have that issue and I think that could have been solved by removing the bittering addition completely and just going for a hop stand

    I enjoyed the video, but i have a couple of concerns.
    Outside man?! Really?! Haha. Did your beer taste skunked at all? UV is the enemy (and O2 of course) of beer and every time I saw all that golden liquid getting smashed by UV rays it worried me.
    Also, did your second dry hop ever make it into the beer? I have tried that method a few times and the trub just falls on top of the fresh hops and holds them down. I end up needed to lift the heavy pressurised vessel on its side and tipping it back and forth, which is dangerous. I think you really need to dump the trub first, or just put them in the top while pushing c02 through the collection jar.

      Honestly I’ve never had a skunking issue, I’ve tested beers only ever done in the dark versus those done like the NEIPA and I don’t think they’re in sunlight long enough to get properly skunked
      Second dry hop did end up merging with the rest of the beer once it had time to dissolve, since the pressure in the bottom was higher than the top so it forced things up to the top

    great beer looks impressive...
    I've found dry hopping this method thought the collect bowl only half at the most of the hop pellet get actually into the beer , so have been connecting the gas/co2 to the top connecter that has your float connected & blowing co2 through that while opening the top to add your hops it works great with 100% dryhop contact & being able to push any air out that tried to get in ....

    Love your channel… I like neipas but find it hard to drink them as a session beer. They have that juice character I love but the fg is too high with a full body. I always make sure my fg gets down close to 1.010 to make it more session-able for me. I think your beer would be great with the added bitterness too offset the sweetness. You hopped the guts out of it!!!!

      I’d actually tend to agree with you there, great as an opener or just to have a few, but too sweet to keep going, it’s why I prefer crispy lagers tbh!

      Ca: 58
      Mg: 5
      Na: 21
      Cl: 43
      SO4: 73
      HCO3: 69

    That looks fantastic. How long did you leave the fist dry hop addition in the fermenter? If it is was in until you transfered, that could cause some hop bite and big bitterness.

      Cheers! All in all first dry hop addition was in the fermenter for around 5-6 days, second batch was in for 3 days. Added the second batch 2-3 days after the first dry hop
