Classic Carrot Loaf Cake Recipe with Cream Cheese Frosting | Cupcake Jemma

- Can you get more Classic than a Carrot Cake? This is the perfect recipe for all you beginner bakers out there and an absolute must for your baking repertoire. This Carrot Cake recipe is moist, flavorful and ridiculously more-ish topped off with a tangy Cream Cheese icing making it the perfect accompaniment to this Carrot Cake. If you have the time to wait I recommend you bake it the day before you serve it to let the sponge relax and the flavours mature.

Tin Size:
My load tin is 31cm long and 13cm wide and 8cm in depth. Which holds the same amount as any 2lb loaf tin.
For the Carrot Cake:
225 ml/g Sunflower or Vegetable Oil
120g Caster Sugar
120g Light Brown Sugar
3 Eggs
210g Plain Flour
3/4 tsp Bicarbonate of Soda
3/4 tsp Baking Powder
Good pinch of Salt
1.5 tsp Cinnamon
125g Nuts - I use a mixture of Walnuts and Pecans
175g Carrots
For the Cream Cheese Icing:
50g Unsalted Butter
75g Full Fat Cream Cheese
250g Icing Sugar

I have recently in lockdown have been binge watching Jemma and sally and they never fail to impress I have tried a few of the recipes and the carrot cake is one of my all time favourites, I even made the maple pecans with it and it may be a minor thing to do but it makes a major difference.

Thanks a bunch my whole family loved it!! Super flavorful with only 1 spice, moist, beautiful color (i substituted light brown sugar with dark brown sugar, great contrasts). I put about 20-30 grams less sugar for the icing.

Carrot cake seems to be the cake I make most. I don't tend to put nuts in mine but I do add a little ginger, nutmeg and orange zest. Definitely one of my favourites!

First time I went to London I sat at a lovely coffee shop/book shop and had a tea and carrot cake. It was awesome! Such a good memory!! (I am Brazilian - here our carrot cake is a bit different, usually we beat it in the mixer). Loved the recipe! I will try it this weekend!

I just baked a carrot cake with this recipe but with less sugar (100g white 100g brown) and it came out absolutely amazing! Very moist and fluffy! Thank you so much for the recipe💛
I did 90g caster, 100g brown with a tbsp or 2 of maple syrup and I think it's still too much sugar.
Made this on Saturday and left it overnight before digging in...it is DELICIOUS! Very moist!

Pineapple I've never heard of that in it it sounds so disrespectful to say pineapple and carrot cake in the same sentence lol
Carrot cake can have pineapple- very common in USA. I use crushed pineapple so just a hint of it, not chunks.
Hummingbird is banana and pineapple, not carrot....traditional Southern cake.
Pineapples help with the carrot cake from getting too much protein when over mixing
@@EaterOfBaconSandwiches I think it is, you can sometimes add apple sauce instead of pineapple puree, so that batter does not get thick

was it supposed to have the fan on!!?? she never said in the video, nor in the written instructions, ah man!, no wonder it took longer to bake for me. I don't have the habit of using the fan because I'm from the States, where fan ovens aren't that common, but now I live in France where all ovens have them

I never comment but I made this today despite never being a carrot cake fan - and hands down this has me converted!! I added a touch of honey for extra fragrance and sweetness and that made it pure perfection. I will try the maple pecans next time :)

This is the dye in the chicken feed! Organic eggs are not so bright orange because they do not contain any additives in their feed. This is how you can recognize organic eggs.

Made this for a friend who loves carrot cake. Personally carrot cake would not be a choice for me. However I followed the recipe and it turned out beautifully I asked for honest feedback from my friend who said it was a winner. She froze slices and said it really improved with the keeping. The pecan nuts were a hit too.

Just made this and it looks really good. Hope it tastes just as good as I used golden caster sugar instead of white because I didn't have any
I make mine the same way except I add crasins to my batter. I love the tart little bite throughout the sweetness of the cake.
I made this yesterday (a long loaf just like the video) without the icing because my husband is not a fan of icing in general. The end result was fantastic. I can just imagine how decadent it is with the icing and candied pecans! 😋
