    Hello there, I am a southerner and I loved Piccadilly's cafeteria red velvet cake. I must say my expectations are very high when it comes to the actual flavor. So not all red velvet cakes are created equal if you don't know the true flavor. Making this cake from scratch is very risky because if you don't follow this cakes rules on the ingredients it can ruin the flavor. That's from my experience.lolol. When they first came out with a red velvet box cake it did not taste well at all. But when I came across your video I said to myself I have to give this a try because it's been decades since I've done a box red velvet cake. I followed your recipe and I cannot believe how wonderful it tasted. The buttermilk and butter really makes a difference. The cake was so moist it broke apart LOLOLOL. But I didn't care about that I only cared about the flavor. This is it. Yes I used the same brand you used and I will stick with it for sure. Thank you for this video. You made my year!!!

    Great 📹!!! Is there a reason you use the whisk attachment versus the paddle ?

      I’ve used them both however for me the whisk makes my cakes more light and fluffy, which is my preference, but you can use the paddle as well. Thanks for watching.

    Do you need Buttermilk? To be at room temperature.

      It doesn’t have to be, I didn’t have mine at room temp, I simply took it out while I was mixing the other ingredients, so maybe five/ten minutes prior to baking. Thanks for watching!

    will the icing melt? does it have to stay in the refrigerator.

      Once you make the icing, place it in the fridge while the cake cool. After about 25 mins, spread it onto the cake. Otherwise the icing will melt slightly due to the warmness of the cake or bc the icing hasn't quite set.

    What does the vinegar do to the cake??

      Connie Silva vinegar is used in scratch recipe it has a chemical reaction with the buttermilk which is what makes red velvet distinct as it becomes very fine and moist.

      Ted Witt use the same amount of butter the box calls for. She used 2 sticks of butter.

      Lulu Gbatea I make my own buttermilk, add 1 tablespoon white vinegar to 1 cup (measuring cup, then add milk to top it off. Let sit for 5 minutes!

      Teresa Lamb, YW. If you leave the vinegar out of the ingredients, your cake will still turn out just fine bc you adding the buttermilk, which makes your cake even more tender. But adding it also help make your cake light and preserve the reddish color. You can also substitute the vinegar for a teaspoon of lemon juice, bc it has acid in lemon juice as well.

      The vinegar help gives it that bittersweet taste. That really makes the red velvet cake different from the chocolate cake.

      Ruth, thanks for watching! I just clean it after every use or every 2-3 days I try not to let any food stay without cleaning it that's all. I use Ceramic Stovetop Cleaner I purchased from Ross it works great. Thanks again for watching!
