Fall is finally here and I was just craving some warm and cozy chili to start off the season right. I also tried making two things that I’ve never made before and I pleasantly surprised myself. I had an easy crockpot night and made my daughter’s favorite chicken tenders. To wind up the week I made a special pie for a special subscriber.     Chili that pleases everyone….
    1 lb ground chuck
    Half medium onion diced (Frozen pre-chopped works great, too!)
    29 oz can Lucks Pinto Beans (Do not drain or rinse)
    27 oz can Bushs Chili Beans (Do not drain or rinse)
    15 oz tomato sauce
    15 oz water
    10 oz can Rotel mild diced tomatoes with green chilis (do not drain)
    1 packet Chili-O or McCormick chili season mix
    Brown ground beef and onions, drain off excess grease and return to pot
    Add pintos, chili beans, tomato sauce, water, rotel, and package of chili seasoning.
    Bring to a boil, reduce heat, cover and let it simmer at least 15 minutes but the longer the better. This is great to prep and put in the crock pot and easy to double for a larger crowd, but this amount feeds my family of four perfectly with leftovers for later. This can be customized to your liking with larger tomatoes and bigger style beans, but my family likes it just the way it is. The flavor or McCormick is bolder and richer than Chili-O without being spicy hot (we love flavor but not HOT) and I have to say it has grown on me, hope you love it too!     I nearly forgot to tell you guys what my mom said when I ask her the reason she boiked the potatoes whole before she cut them. First she said because that's how we do it 🤣😂 Then she said she thought it made a better texture for the potatoes. That they did not get so mushy like a mashed potato and they were a little firmer. So there you have it from my momma to me 🤣❤👍

      I heard a story like this before….
      A lady used to cut the ends off her ham. Her husband asked her why?
      She said my Mother always did it like this! So she asked her Mother why she did that? She said,”My mother used to do that!” Her mother called her Grandmother to ask why she cut the ends off the ham? The Grandmother replied, I didn’t have a large enough pan. 😂

      We have always left the skin on when we boil the potatoes. It makes them taste better. But you have to let them get good and cold before you peel and cut them. If you let them get cold first they will taste better and the skin will come off with the side of a spoon. We try to boil them the night before and let them sit in the fridge overnight or at least early in the day so they can sit in the fridge for awhile. And you can just put the eggs in the water with the taters to cook them if you leave the skin on.

    I always boil my potatoes whole with the skins on too! I'm 60 and my great grandmother did them that way. I add celery, dill pickles or dill relish, hard boiled eggs, Hellman's Mayo, salt, pepper and a tiny dollop of mustard.

    Finally a woman who does " normal" cooking.I intend to try some of your recipes.I can't eat the millions of spices most people use so your cooking looks like something i can eat.My mom cooked her potatoes this way for potato salad & I've never figured out why.I peel then chop my potatoes,I use the liquid from a jar of sweet pickles,1st when my potatoes are done,I add mustard & pickle liquid ,stir,let that sit while I mix mayo , pickle liquid & sweet pickle relish or sweet salad cubes then add this to potatoes stir ,season with salt & pepper,try to make potato salad first & let it sit in fridge for flavors to "marry".

    You have such a gift for cooking, Mel. I’ve seen you fry potatoes several times, and it seems magical to me. Reminds me of my grandmother’s. I can cook a lot of delicious things, but frying potatoes eludes me.😊💜

    I love your simple down home recipes. I have been making potatoe salad for years, I peel, cut, and boil my potatoes just as if I were going to make mashed potatoes. I put eggs, celery (2-3 stalks) dill pickles with a little of the juice, red onion, olives, mustard, mayonnaise, salt, pepper, to taste and paprika on top for color

    I agree with the lady who said that you should let your potatoes cool before you peel them. Cooking them the night before might help time wise. I love green onion, pickle relish, hard boiled egg chopped, mayo and a bit of mustard in my potato salad. I top my salad with one or two sliced hard boiled egg with paprika sprinkled on for colour. Oh and a bit of finely chopped red and green pepper is good too.

    I grew up eating Ritz chicken. I’ll be 70 yrs. old on Halloween. I still make it once a month. Delicious.

    I wonder if adding relish or pickles to potato salad is more of a southern thing. I mean absolutely no disrespect. Here in my area of Wisconsin, we do potatoes, onions, chopped boiled eggs, mayo, mustard, a little sugar, salt and pepper. That's all. It's so fun for me to see how different things are made in other parts of the country.

    I always boil potatoes whole, then peel them. That's the way my mom did it. I also boil the eggs in with the potatoes! 😀

    I put Mayo, mustard, dill pickle relish, hard boiled eggs, green onions and celery in my potato salad. That pie looks great. I will make sure to try that. Thanks Mel for another great video.

      That’s how I make mine too. Sometimes I switch it up and make a loaded potato salad with Mayo, ranch dressing packet, bacon, shredded cheddar and green onions. It’s really good too for a change. I usually make both for the holidays as some in my family don’t like traditional potato salad but will gobble up the loaded potato salad. It makes my heart so happy to see my family enjoy a meal together :)

      Chicken spaghetti. I never make it because my hubby can't eat chicken but when she makes extra she always puts away some for me. Everytime we make Shepard's pie I think of my late mother-in-law and hubby's cousin whom who we lost last month.

    I grew up with my grandmother and my mother making steak tips or beef tips. They made them on the stove and then when the Crock-Pot came out my mother made them in the crock pot. We always called it smothered beef. :-)

    Impossible pie or blender pie. Momma used to make it for us too. I remember we were sooo amazed it didn't need a crust and it is soooo good. Thank you for reminding me. I even have Mom's recipe (cut out of a magazine) she used in the 70's❤️

    Mel I have a potato hack … if you make a very thin cut around the center of the potato and boil it whole, when they’re done and you rinse them under cold water, the skins supposedly slip right off of the potato but you have to make that cut before you boil them … like you I don’t make the potato salad either because my sister does it. I told her about the hack but she refused to do them any other way but her way?! Lol Oh well … maybe it will work for you? 😉 Your potato salad looked delicious!     I agree with your mama. My mil did not want mustard so I’ve never made mine with mustard. Later in my life I started adding sliced olives and it was soooo good! I do use boiled eggs

    Homemade potato salad has to be my favorite summer party dish. My family recipe is potatoes (traditionally redskin but I tried russets last year and they were fine), hardboiled eggs, bacon and green onions. The dressing is mayonnaise, a little milk, celery salt and pepper. In recent years I've been adding some mustard and chopped celery as well as a little white vinegar to the potatoes before mixing the rest of the ingredients. I love all varieties of homemade potato salad and always looking for ways to improve the family recipe. I'm enjoying your cooking and grocery haul videos.

    Yes, boil your potatoes whole otherwise they get mushy. Let potatoes cool for a while and then peel, another way to make sure they aren’t mushy. We add one hard boiled egg per potato, celery, onion, sweet pickle relish, a little mustard and the mayo. S&P to taste. Make ahead 4-5 hours to get cold; best made the day before.     Thr potatoe salad I also put in some dill pickles cut fine and hard boiled eggs. If you let the potatoes cool completely they are easier to peel and cut.

    We put celery in our potato salad. That is my daughter YVETTE’s favorite pie but she can’t eat coconut so I leave it out ! I use bisquick instead of flour. So good ! Gerry here

    Mel, leaving the skin on the potatoes when you boil them actually make sure that the nutrients do not Leach out into the water. They are close to the skin of the potato. This way you keep more nutrition in that potato.

    Red skinned potatoes boiled whole with skin, keeps their shape better and does not get too mushy. I love onions, green bell pepper, sweet pickle relish, mayo and a splash of vinegar in mine.

    Those potatoes look so yummy. I don't ever think to use my cast iron for anything but cornbread. My Aunt Louise used to make that Impossible Pie and I didn't have the recipe. Thanks for including it.

    Next time you make chili instead of adding diced tomatoes add salsa that's how I make mine. So delicious.

    I found your channel last night! So glad I did! My potato salad is very basic. Potatoes I cook in the microwave with the skins on, hard boiled eggs, onion, mayo, mustard, salt and pepper! And I will fix my green beans your way now! Interesting pie! And you're right, they didn't have a lot to work with back then! So happy I found your channel!

    I have never had potato salad that didn't have celery and boiled eggs in it (lol)! I also put a very small amount of bell pepper (minced) and diced pimentos! This was my mother's recipe! We use a mixture of Miracle Whip and Mayo with a couple tablespoons of mustard! Now I have altered my mother's recipe! I boil my potatoes with a bouillon cube/powder with a little sea salt in them! I also use honey mustard instead of yellow! When the potatoes are drained and still hot, I add my seasonings (garlic & onion powder, McCormick's Salad Seasoning and black pepper & some sugar)! I use Best Maid Sandwich Spread it makes it creamier! People are always asking me to make it for them, but I'm disabled and I get tired so quickly now! You have to be someone I really like or will say NO! But it's like you said everyone has their own way of making potato salad! I'll say just keep trying things you would like to put in it, if it tastes good to you and your family then you have done your job!😉✌❤🙏

    Everything looks so yummy 😋 I boil my potatoes whole the night before they are so easy to peel when they are cold I also dice about 10 sweet gherkins if I have them instead of sweet relish which works and I boil 1 egg for every 2-3 potatoes I use...chop them small and dice your onion really small children dont even know they are in there mayo and mustard salt,pepper try the sweet gherkins they give it a really great taste 😊

    I peel and cut my potatoes before cooking them in salted water. Then add diced sweet pickled, boiled eggs, chopped cooked bacon, green onions then mayo and miracle whip a little yellow mustard . Mix and serve.

    I make my dressing in a bowl and then add it to the potatoes. It mixes in easier and it doesn't break up the potatoes.

    We put dill pickles with red onion or green onions. Mayonnaise and pickle juice and mustard. It is so good. The last potato salad I made I was out of potatoes so I cooked tater tot’s til they were crispy. It was so good. I’ll make it that way again 😊

    Oh Mel I am drooling over your Ritz chicken! I saved this to make later. Your green beans look just as delicious. I love me some fried potatoes 😋. Nothing beats homemade potato salad! I boil my potatoes whole because that's what my family always did lol. I cut and X on the ends of the potatoes though if that helps. I also love black olives, boiled egg and green onion in my potato salad. Now I'm craving some lol!

      I forgot to use cheese but sometimes we also put some shredded cheddar cheese in our ritz cracker mixture. And thank you for that tip about putting the X at the end of the potatoes, I will try that. I love eggs and green onions in potato salad and sometimes my momma will put shredded cheddar cheese and some thawed peas in her potato salad. There are so many different things you can throw in potato salad to make it delicious..😂🥰

    Ritz chicken is so simple but so yummy. I just made it the other night and dredged it in honey mustard dressing and then the ritz. It was my first time using honey mustard and I’ll be doing it again. It was delicious!

    OMG....the dinners look so good. Thank you thank you thank you for showing old fashioned recipes without adding cheese to every dish. Your dinners always have a balance...protein, veggies, something green & a tiny bit of starch. I'm going to try the steak bites & the Ritz chicken. I kid you not the potato salad is the way my Mom makes her salad with the addition of hard boiled eggs. Watching this video made me change my menu for the week😊.       🥰oh Jennifer thank YOU! That is really exactly how I put my meals together, my momma did the same thing. Simple and a mix of fresh, frozen, canned or boxed food is nothing to be embarrassed about in my book. I'm showing what I cook for our actual suppers as a working wife and momma. And sometimes I will throw in a clip of nights I don't "cook". It's chili buns, pizza, sandwiches, canned soup, salad and frozen chicken tenders etc. I truly want young mommas to know it doesn't have to be so hard at supper time. You might change your mind about me next week 🤣 My what's for dinner on Sunday is gonna be a casserole video, and they all have cheese 🤣 Thank you again for this sweet comment and for supporting me in being real.
