Steph, the potato chops are dipped in egg to quote the Chops to basically bind it together while deep frying. It's not really necessary if you're shallow frying. 🙂
Deda, Adding butter to the potato paste while making Potato Chops is essential as it enhances the flavor with its rich, creamy taste, improves the texture by making the paste smoother and more cohesive, retains moisture to prevent the mixture from becoming dry and crumbly, and acts as a binding agent due to its fat content, which helps hold the mixture together for easier shaping and frying 🙂

Maria, The Potatoes must have been the wet type. Sometimes it breaks because of that, you need to buy the dry type of Potatoes. In India they are called Jawari.

Linda, Yes you can you it along with other ingredients like Ginger, Garlic, Haldi, green or Red chillies to make Beef, Chicken & Pork dishes. This will act as your base Spice Powder.

U should always apply a little oil on your palm whilst placing d patoto paste so that d paste doesn't stick to d palm of your hand whilst making d chops.
Yes Julie, we do that now. If you watch our Chicken Cutlets recipe we have shown oil applied on the hand before molding the cutlets. But you can also manage without applying oil if the potatoes are the dry and not sticky. But thanks anyways for sharing your thoughts with us 🙂
Yes Suzzette, you can use egg before you roll, but I've noticed that sometimes the egg gives a burnt look to the potato chop hence I prefer not to use it.

Jancinta, I agree with you completely, in India you get Jawahar potatoes which are the dry type potatoes. I didn't mention it in the film as we have an international audience & this variety may not be available everywhere. The chops will entirely depend on the type of potatoes used.

Helen, if you like it you can add egg coating but it's not required as we are not deep frying the chops.
It depends on type of potatoes cause sometimes potatoes r too soft or too wettish type n the chop is not formed
