This place reminds me of the old scetch Soam, Soam, Spam, etc. You can have your scrambled egg sandwich any way you want… plain, scrambled egg sandwich with L and T (minus bacon), scrambled egg sandwich with (option here). Drinks extra.

Interesting video, but I wonder why they repeatedly did a jump cut to skip the step where the chef apparently switches the eggs from the round pan to the square pan?
Probably a secret family technique, passed down from generation to generation for the last 1000 years. Or the chef spilled some of the egg so they had to clean up first

Does anyone know what kind of pan he is using?

The first is a regular non stick but then transfers to a tamagoyaki pan to square it up. A more sophisticated place would have made a traditional rolled omelette rather than cheating it like that. The recipe is just a modified version anyway with some quick udon broth made with bonito, dashi and dried shitake which is made in every noodle shop in Japan daily. Nothing remotely mysterious about it.
