The last time I indirect heated to 120F I ended up with a well done steak. This was a 2" ribeye. I will only go to 110F from now on. Way more control over temp and better resting time.
I developed the perfect steaksauce for steaks like this. It's based on Roquefort, garlic, dry white wine and fresh herbes (oregano and parsley). The combination of red meat and the cheesy sauce is amazing.
Hey Roel, try “Ossewit” or “Blanc de Boeuf” for grilling steaks. Using it for over a year now. You are almost frying steaks. But your not. You are still grilling. Making a beautifully Maillard crust that is excellent. And since it is beef tallow, the flavors are insane!
I wouldn't dream of saucing a steak that went through that much process developing such intense natural flavoring. sacrilege....but i would try it on a sirloin.
For some reason, Spain is terrible with beef. I got the most beautiful secreto iberico today but I am afraid of trying this with this thin of a cut of meat. Will try with beef when I am back in the colder/beefier parts of Europe...
The perfect steak requires the perfect expensive meat - do that with a Walmart steak. When u can turn shit into gold that's when I will be impressed. Having said that, looks delicious 😋
@PitmasterX, You forgot that your Meater thermometers are not allowed to reach a temp higher than 350°C because you will melt their electronic internal parts. Yet you expose them over the fire.....

The wood fire gives steaks such better flavor. I cant wait to try this it looks insane!
Do that both sides. Add rub on cold side. Close to salmon fire heat.

the butter will burn at those temperatures. clarified butter will do the job though
