LOVE THIS!!!! I want to do this to a couple of my existing tshirts as you mentioned, but how would I handle the neckband in that situation?

You could redo the neckband by removing it first and the attaching it back, or if you wanted an easier way, you could go all the way to the neckband and do the fold over but that might give it a bump at the neck.
