This is nice and fluffy, but not true mantou. True mantou would be denser. My grandfather used to make it all the time and his was dense and everyone would rave about it. My grandmother made it once and it was nice and fluffy and I preferred it, but I was told my grandfather's was more authentic. Oh, btw, it's super tasty grilled!
