Great production with wise and experienced; young and enthusiastic.
Chef provides a humble lens as well of how culinary arts affect globalization and how younger folks can know more about their heritage.

Thank you for opening my eye. I didn’t know there’s a lot of unique kinilaw in the Philippines. I wish you could try my favorite kinilaw. I grew up in Iloilo. My grandfather used to make kinilaw with green mango juice and coconut cream. I live in state now. Last time I when home and look for green mango kinilaw. My late father told me, not a lot of people make it anymore.

I'm from Western Mindanao, and we use Yellow Fin tuna as our meat base. We add mango (hilaw), ginger, onion, citrus, vinegar, salt and pepper to taste. Growing up, my mom has a different approach. She uses galunggong meat, and even anchovies. Mind you walang tinik ang dilis, deboned, at tinuro niya sa akin paano gawin (hassle talaga) before I left for Manila kasi she knows I like her version of kinilaw. Sadly, the main reason that I don't do kinilaw in Manila is because of the freshness of the fish that I want to use. I tried doing kinilaw not so long ago, pero di sya kasing sarap. Dahil sa freshness ng isda. Dapat talaga yung bagong huli, I'm talking same day.

The Philippines was longer a colony from Spain than Colombia was, he probably thought that Colombia was longer a colony because they still speak. Spain colonized colombia for nearly 250 years. and the Philippines was colonized by Spain for OVER 333 years...
