Abi Marquez, the Lumpia Queen, is something else. Her collaborations with renowned international cooks, introducing to them and sharing Filipino cuisine and cooking techniques and methods deserves to be lauded. This sharing is her way to help introduce Filipino food to the rest of the world. You feel her passion and love for cooking coming across from the screen as you watch her.

Sepoys is a term denoting India's infantry men, traditionally armed with muskets during British presence in the Philippines. Most sepoys who came in Cainta are the ones who refused the british command. Due to Brits mistreatment of this Sepoys most have revolted and some have refused to come back to their ships thus most Sepoys during their travel to Manila have fled to the town of Cainta. In time, some have gone through Taytay and even as far as Morong. Back in the 80's the kakanin's, biko, suman and other sweets were top notch in Cainta since most of them are cooked in larged Pugon's. To where we once do our summer jobs after school ends. To this day, those Pugon's and cookery have long been banished. We are the last generation to witness their cooking style.
It was also a Tamil King who ruled Cebu, who accepted Christianity, which ultimately lead Philippines to Christianity in its entirety 500 years ago.

In Middle Eastern countries, it's often better to eat at an Indian restaurant or choose Indian food. The portions are usually large, the prices are affordable, and the food is delicious. In comparison, Filipino food tends to be more expensive, with portions that are small and measured.
I am an Indian national living in the Philippines, for me, Star Punjabi food is substandard. Loved the fusion kare-kare, thanks for sharing.

I love this! Kulang na lang siguro is having the chefs and the food historian to taste the food as well and listen to their thoughts. If di na kaya dahil sa distance or logistics, maybe having another chef or food historian to review the fusion as well.

Love this Abi! I'm a home chef and love both Filipino and Indian food, this was such an unexpected fusion. Why did I think that Kare Kare was more closely related to Thai food, but really it is closer to Indian stews!
I love what you do Abi, working in Kuwait makes me so immerge into arab & indian food cuisine with the mix of all Filipino dishes rolled into one. Here, I've got the chance of having these three whichever I choose to eat & combine very possible 😁. we can see in many indian recipes that they use cashews in many of their recipes, and india is one of the biggest exporters of cashew. I think the use of peanuts in filipino kare kare was to replace cashew nuts that were not as common in the philippines as they were in india

The government should work for direct flights from India to the Philippines and vice versa. These days, Indians have to transit via Thailand or Malaysia, and most of my few Indian friends say they're already happy vacationing in BKK or KL and don't consider heading to MNL.
Besides, visas are not granted to Indians on arrival in Philippines, whereas Filipinos are granted visa on arrival in India!
A Schengen type visa introduced jointly by Thailand, Cambodia, Laos, Vietnam, Malaysia gives easy access to these countries.
I think Philippines is isolated from this arrangement.
Besides, lack of direct flights, being more expensive makes Philippines a lesser option for Indians.

Very memorable sakin yang first time ko nakatikim ng Indian Curry at Mutton Biryani sa Al Khobar, KSA. The aroma was intense and so more was the taste. Habang kumakain ako is namumuo yun butil-butil na pawis sa bumbunan ko habang tumutulo sipon ko at paminsan-minsang gas sa likod ko 😅

the British brought Sepoy (indian troops). aside from the trades earlier, India is 10X bigger than the Philippines imagine the different kind of cuisines or even diff kinds of curry or garam masala they have there. Its never ending. But the best cuisine i ever tried was Indian.

here in the Dubai, UAE, natutuwa ang mga South Asians like Indians kapag nakakain namin yung mga different types of curry dishes. at least to me, nasanay na ang palate ko sa anghang ng food nila. yung different mixes ng spices or Masala. wag ko lang malaman, though may idea ako, paano minekus mekus nila ung food. basta masarap. haha.
I worked in Riyadh and UAE too, Indian dish have minimal to medium spicyness the real spicy dish are Sri Lankan dishes. Even Pakistani or Afghan dish are great too and less spicy.
Pre colonial, ang South east asian e parang Full of tribal realms na hindu majority, kita sa Bali indonesia na maraming sa parehas sa tagalog & majority hindu ang religion, Thailand na Buddhism e galing din aa Hindu. They also made a lot of trading using tribal ship / balanghay. Kaya naturally, Navy powerhouse ang ASEAN.

"It's difficult to find direct influences from India from the precolonial period in the Philippines" - Well guess what, "puto" is of Indian origin. We don't have any direct influenced from India because these went through Malaysia and Indonesia before reaching our islands.
