I’m from Arkansas and the New Year’s tradition is to have hog jowls, black-eyed peas, and some sort of greens and cornbread. It’s not all mixed in one casserole dish, they are all separate dishes, but the tradition is to eat that and you will have good luck and good fortune in the next year.
Cornbread=gold, Hogjowl=riches, Greens=money, black-eyed peas=luck, traditionally the the jowls are cooked with the black peas...Louisiana gurl! We know...🤣😊🤣
Nashville Tennessee & yeah we put some of the pork to flavor the blackeyed peas then frying some since oh 60 years I remember 😂
Southern style greens: Purchase stem in tact fresh greens such as turnip, collard, kale. I prepare three bunches to serve six. In my opinion, never purchase chopped fresh greens as they do not remove the tough stem. Rinse the greens about three times in salted water. I do this in the sink. Drain. Remove the tough stems and discard them. Tear the greens into pieces. Two inch squares is fine. Cook on the stovetop in a deep stockpot. Add about one quart water or beef stock with one half tablespoon of salt. Taste later and add more salt as needed. Bring to a boil stirring and punching down the greens as they wilt. You will ultimately have all the greens submerged under the cooking liquid. Reduce the heat to low. Cover with a lid. Add water as needed to keep greens barely covered. Simmer one hour or more. Keep watch. The cooking liquid will reduce. Greens will wilt down and become very tender. I never add sugar though some Southern US cooks do. I always cook my greens with one quarter cup of bacon grease. It adds depth of flavor. Taste for salt, more is usually required for my taste. You may add pork jowls, pork belly or strips of bacon to the pot at the beginning of the cooking process. This replaces the bacon drippings. The pork can be removed after an hour, patted dry and fried to crisp it for serving. I hope this is not confusing.
I saute greens in a little avocado oil until soft, then add a good shot of hot sauce and organic lemon juice, salt and pepper to taste.

I'm in TN, originally from Georgia. Hog jowl is common around here, and you can even get it sliced into hog jowl bacon.
Common in Asia. Without skin and fats are usually trimmed off.
I almost only use pork jowl bacon. It’s half the cost of regular bacon. And soooo yummy! I cook it sliced like bacon instead of chunks.
Because of you I bought smoked hog jowls a few weeks ago, and haven't looked back...YUMMMM...mine are oven roasted at 350, 20ish minutes, 7lbs, yeilded 1and1/2 cups drippings, they are in freezer for future use...trim off skin, after...cause I ain't gonna eat pig hair 🤣🤣🤣

Italians use the jowl instead of pancetta in pasta sauces. They call is guanciale. I think that it is not smoked. I think it is brined, if I'm not mistaken. I found it at an italian market in Manhattan many years ago. I used it in Pasta Allamatriciana, if I am not mistaken. In the days when I cooked a lot of pasta for myself.

I'm in Alaska and I found them at Fred Meyer (Kroger) in vacuum packs like that labeled Pork Jowl Bacon - it's smoked and has salt. I do mine in the frying pan so I can save that beautiful fat (makes the best eggs)

I have I guy I’ve been following for about 3 years who is from the south to me but I guess the N to him. Anyways, I started cooking outside camping or in my backyard with a outside camping Dutch oven it has legs you can hang it from a tripod and put all of your fire or we put it on a specially made table and cook it with coals underneath and cold and top. Anyways he in most Dishes cooks with a little bit of that at the bottom of the pan as his fat and then he tosses in his carrots and onions and whatever which it won’t work anymore with me doing keto but that’s the first time heard about bacon jowls.!
Awesome information. I used to buy pork jowl to cook with beans or greens that I no longer eat. I never thought about using it on carnivore! No more high oxalate greens for this body.

I can find smoked pork jowl at my local Walmart in the same area as they have the hams. There is salt pork and smoked hocks right next to it. It is usually a nice big piece or 2 pieces just like what you have, in the same type of package as yours and it has the skin on 1 side too. Only difference is it is smoked and smells & tastes like bacon.
$5.99 per kilo here in Australia. My butcher sells them no skin.. I would not have tried them until I saw your Christmas version of jowls, So thanks for this

I do love pork jowls! I buy them smoked or plain, usually already sliced. I live in the south so they are easy to find and yes, they are about half the price of pork belly or bacon and, to me, are sort of a cross between those two.

If you have a Whole Foods in your area they carry pork belly. It’s pricey but you can buy the quantity you need. They will slice it for you too.

I’m air frying more beef fat trimmings tonight. Funny…I found a butcher shop within a grocery store near me that gives me beef fat trimmings. At first I timidly asked for two pounds and yesterday I got four. But every time I ask, I feel like I’m getting contraband!

I was wandering, has anyone ever just deep fried fatty pieces? I almost ruined my air fryer cooking some suet. I almost did not get it clean enough to run in the house again. What do you think? Deep frying sounds reasonable. I would use beef tallow.
You can absolutely do that! Or bake on parchment and it will end up baking in it's own fat. Keep the heat to about 350 so there's no splatter, just a gentle bake!

We have them in stores where I live in northern California but they are very salty I can't find them unsalted.
Hi Kat, on occasion, I can only get them salted, too. I usually soak them in a bowl of ice water to remove as much salt on the surface as possible. Then I air fry them as usual, and they are much taste year!
That sounds more like what we call in the south “salt meat.” We use small amounts to season our peas and green vegetables. It is very salty. My daughter found hog jowls in a local grocery here in South Louisiana. Walmart has smoked which I’ve never tried. It would probably be good for seasoning. Good luck on your hunt. ❤️

@ketogenic woman how are you going with cleaning the air fryer? I love it and better than my last air fryer but this one although easy to clean the grate gets a lot of grease build up that is hard to get off because it’s instead the2 sides 😢

I haven't used the grate yet, I mostly use the air fryer basket and I put everything in the dishwasher each day so it's all staying pretty clean!

Yes I do clean it daily! The fan pops out and goes into the dishwasher too so that one is easy.
