@hithereiam4878 it's possible, but unlikely. It's very easy to overmix with a stand mixer, less so with an electric hand mixer. If anything the electric mixer should have helped whip more air into the batter and given a fluffier result. I honestly think it's just a bad recipe he used with not enough egg or flour and too much fat
Are you (and the recipe) in the US? I recently heard on a forum somewhere that the baking powder in the US is double-acting and the baking powder here in Germany is only single-acting. So that leads to a bit of recipe difference. My mom came to visit me in Germany from Florida, and was making a different recipe and we were wondering why it was so dense and flat despite trying 2 different brands of baking soda and her usually being able to make that recipe in her sleep back home. Then I saw on a forum a bunch of Americans in Germany looking for imported baking powder because of the double-acting factor.
Another ( probably last :D ) tip- making the ganage. Never cook chocolate on a stovetop, it will overheat and split in an instant. Instead, just heat the cream to a point when it's almost boiling (tiny bubbles forming on the edges of the pot) but DON'T boil it, then pour the hot cream over chopped chocolate. Let it sit for two minutes, then give it a stir with a whisk. It will be silky smooth and you can then whip it in a cloudy chocolate frosting or keep it as a thick, rich frosting. The butter is unnecessary imho.

I think that the baking error is caused by using hand mixer when adding fllour. In the video she gently mix it in. Also, with sponge cakes it's better to let them cool slowly in the oven after finished baking. It do not deflate so much 😅. Still you did great job and the cake looks amazing :D And let's be real the taste is more important than the look 😛

If you ever make a two-tier cake again, you can simply bake one half of the batter, wait a little bit for it to cool down, then get it out and bake the other one, using the safe cake tin.

I am not a baker or even a giod hobby baker but maybe the cake deflated so much because there was no egg or something similar? I think egg is often used for structure right? I bet the thing in egg that does it is also found in other things to make it vegan but maybe that is the problem (sometimes recipes online just leave out important parts, so often it's not your skills but decieve that made the recipe end badly).
There were 2 eggs in the recipe, but I am a baker and to me its half the amount of egg that is needed. Also there was too much fat and didn't look like enough flour. So all around a bad recipe. That's the hardest thing to learn when baking, being able to identify a bad recipe without making it ten times wondering what you did wrong 😂

My cakes also always deflated, mainly because the baking pan was too big. Maybe you need to use a smaller pan😅🧐
