Such a terrible, yet lucky attempt.
So, I wanted to explain how do I even do this kind of stuff when I finally kill this boss, but it won't be anytime soon because I have no clue how to deal with the third phase, and it will take like 500+ attempts to be able to do it, so, instead, I'll explain it now.
First of all - you can't outrun this boss. And even if you could - it won't help you because of the third phase. You HAVE to dodge, at least sometimes.
First phase is a strict movement pattern, something that "I Wanna Be the Boshy" bosses have. You need to move the same way each attempt, and then you'll be able to clear it consistently.
To dodge his charges successfully, you need to:
1) Stand on the platform (or run away from the boss)
2) Dodge the first charge by moving down and to the side where the boss at when he starts to charge.
3) Dodge the second charge by using Bobbit hook above you.
4) Dodge the third charge by simply dashing.
A good example is at 0:04.
I managed to fuck it up at 0:18 by using hook too early, but somehow I still managed to survive.
To dodge his surprise charge after exhaustion, you need to count to four or five seconds in your head when he starts to rest, and then immediately use RoD as far as you can. In Phase 2, his eyes open when he is ready to charge, and you have some time to use RoD (a good example is 1:06 - 1:10, you can briefly see that his eyes are flashing and then he charges).
Phase 2 is a running marathon, you can't pure dodge anymore because there are hundreds of projectiles homing at you. You have to mix up running and dodging, and the only way you can "outrun" the boss is by hook-boosting on the platforms. He will eventually get to you, and that's when you dodge. If you fuck it up - you're probably dead.
Phase 3 seems like a rollercoaster, again, I have no idea how to deal with it. Right now I'll have to learn Phase 2 to be able to clear it consistently, and then I'll try to deal with Phase 3

The thing is, boss kills you in like 2 charges, there's almost no point in healing over time.
Also, first phase is some sort of a dps race, you don't get to use other weapons.

The second phase tho can be dodged forever (afaik), so yeah viscera is probably good, I'll try that out.
