    My favorite thing this week is a lb of steamed broccoli florets topped with a simmered marinara sauce loaded with onion, mushrooms, and chickpeas! I top it with a 1/4 of an avocado- and maybe have a few air fried potato dipper wedges along side! I love your videos- you really helped jump start my plant based journey!       So interesting, thank you for explaining things! I’m around 2 weeks in, with 2 60th birthday celebrations in between 😝 but have managed to stay fairly consistent ( apart form Chinese meal) and already I’ve lost around 6lbs. I know it’s probably my ‘ recent’ weight first and things will slow up, but it’s given me motivation to carry on, and I love all these foods. I have also cut out bread, which has made a big difference. Wish me luck, another birthday celebration this weekend, they want pizza take out! So will be taking my veggie components. Thanks again Chelsea.
      Ps it’s funny, we were on holiday in Greece this year, and our hotel buffet didn’t have a lot of vegan choices as such, as mains. So my husband and myself found ourselves choosing what we could, which were veggie sides, salads, which tended to be a big pile on our plates! Although being on holiday you tend to drink wine etc too we found that when we got home, we actually hadn’t put on any weight, which was a first! So now I’m following this way of eating, I’m thinking now, there was something in our food choices then 🤔

    I really appreciated hearing what you had to say about avacados!! I have been demonizing them, but you're right...if having 1/4-1/2 of an avacado on my salad or other healthy meal makes it more satisfying and helps me to stay more consistent, that's a win.

    You are so right about rice. It’s a great diet food. Always a half hour away and no peeling and chopping and checking on the saucepan. You can go for a walk and come back to a meal. I put nori, tomatoes, half an avocado and soy and sushi vinegar on my rice. It’s a delicious meal with minimal prep.
    Another staple is my smoothie bowl with two bananas and frozen berries so lots of fibre and with cocoa nibs sprinkles and chopped nuts. I add protein powder to my smoothies. I aim for higher protein than you do as protein also aids with satiety.
    Pumpkin is delicious and an easy side instead of potatoes. You can bump up the sweetness with maple syrup and spices for a sort of pumpkin pie dessert.

    Ok this is officially my ALL TIME favourite video you've done👏👏👏
    Rice is definitely comforting and much quicker and easier than other starches...... and pumpkin is sooo delicious it's insane that some varieties have less calories than broccoli!!! I absolutely LOVE it with cinnamon, makes it taste sooooo sweet😋😋
    Avocado has virtually the same calories per pound as chickpeas! Very eye opening hey!!!!! Prob a different TEF given the fat content, but not a deal breaker vs a jar of peanut butter 😂😂

    I love steamed potatoes and broccoli with a vegan cheese sauce . Could eat that or a rice bowl loaded with veggies and a tahini sauce every day. Thanks for all your great tips Chelsea!

    My fav thing at the moment is purple cabbage and whatever veggies I have in a Stirfry (no oil) with a homemade no oil sauce and I mostly pair it with a sweet potato. 😊

    Love your video, I've been watching you or awhile. I find that these delicious foods seam to make me bloated, your stomach is flat, everyone on these plant based videos are very slim. I'm slim but, I'm quite bloated, so disappointed, I avoid sodium, never eat out, never by pre-made food, very confusing.thankyou for another great video! 😊

    So much great knowledge here! Marketing has us all in a trance. Most people are not eating what humans are supposed to eat! It just blows my mind that we eat like our dogs and cats should and they are eating how we should eat. Give them the meat. We need the Whole plant food. We are having stir fry tonight. I cant Wait!

    My favorite foods for weight loss would be potatoes first, I’m a huge broccoli and zucchini fan as well. More often than not these are a part of all the meals I come up with.
    I’ve been very inspired by your salads and actually decided on a variation of the pics of salad you just shared for my work meal today! Thank you for making this whole journey so much easier to navigate!

    Raw red cabbage helps to bulk up my salads, great with tomatoes and basil and some thinly sliced red onions. I love veggie soup for dinner, I eat a big portion and I don't need anything else as I'm not active in the evenings so there's no point in having a richer meal, I'd rather eat more earlier in the day.

    Lately it’s been coconut mango rice porridge for breakfast, a wrap stuffed with veggies, beans and avocado for lunch and soups or pasta for dinner with a salad.

    Raw Chopped brussel sprouts and broccoli with seasoned steamed rice and guacamole! Switch out the rice with potatoes qod! YUMMMM!!

    I am loving porridge for breakfast cooked with with frozen cherries, mango and blueberries. Add little oat yogurt and flaxseed meal 👌Lunch is loads of yummy veg, lentils, potatoes 🥔 often with Mexican or Indian flavours. Dinner is random but I try to eat lots veg with it. And I love the sweet potatoes with purple skin and white inside. 😅

    One of my favorite things to eat right now is Sprouts! I have started sprouting all types of wonderful, healthy sprouts and using those as a base of my salads not only do they feel me up they make me feel so good and healthy.

    Current favorite: steam mini Yukons, slice in half, smash with a fork, roast in the oven for 20 minutes, too with vegan cheese sauce. I had fallen out with my habits a bit and I’m tracking eating potatoes daily because they are so filling. Thanks for the reminder on the kabocha (buttercup) squash recipe - that is seriously yum! I’ll have to make it again.

    Love this Chelsea! I love rice but do feel guilty since it's higher in calories. But I love how you said since it falls into that "comforting" category, if it keeps me from ordering takeout, it's a win. I try to use cauliflower rice as much as I can but if I'm really craving rice, I won't feel so bad about giving in!

    How do I eliminate bloating from eating non starchy veggies ? I am having a lot of issues with it after eating things such as broccoli and brussel sprouts. Thanks 😊

      Start again by eating smaller quantities and building up from there. I had the same issue with beans and now I'm absolutely fine. You might b eating too many non-starchy veggies (because you're trying to lose weight) but not enough starches (potatoes, sweet potatoes, squashes, etc.).

      Both are cruciferous veggies which can be harder to digest and cause gas. You can try lower fodmap non starchy veggies like zucchini, Kale, spinach peppers, etc. And see how you go on those. And eat the cruciferous ones in smaller portions Nd build it up.

    I started missing potato salad, as I remembered it, and got off track by trying the "healthy" mayos in the store. It didn't work, but if I cut up, or take a "masher" to the cooked potatoes, add some avocado, and some of that great no salt stone ground mustard, garlic granuals, hot pepper flakes, and whatever vegis.. finely chopped red onion, celery, etc. I love this with some regular salad on the side... hot or cold, and feel very satisfied. I agree that some avocado gives me some fat, and is satisfying, and fills that need/desire for mayo/dressing that I remember. I have had some dehydrated soup vegis in the past, and when I rehydrated them... they were great in the 'potato salad' mix. Thanks for helping keep my creative juices flowing, and helping me stay on track.

    Bananas are the only food I really do not like at all, but at some point I'm going to give them another try. They are the most affordable fruit in the U.S and they are so versatile.

    I do the half/half plate with either potatoes (steamed, roasted, mashed,etc.) and veg (steamed zucchini, rapini, asparagus, etc.) or rice, and stir fry veg. I too with kimchi most often. Evenings I make a huge salad with a mix of greens and sometimes broccoli, just with lemon juice and salt and pepper, next to my rice or potato. Buttttt on weekends i do à take out, and I’m just attached to chips and wine :(

    I love plain microwaved Kabocha squash, it's the best! No need to add salt or a marinade. I find bananas really filling and help me stay on track. This is an excellent video, thank you Chelsea

    My current absolute favourite snack is carrot sticks dipped in pkhali (authentically oil-free Georgian vegetable pate). It is an absolute game-changer!

    I actually lose weight eating avocado on toast for breakfast and I gain weight eating too many starchy veggies or beans. Avocado only has a few more calories per lb than beans and you tend to eat more beans than avocado. The recommended portion of avocado is 2 tbsp or about 1/4 or 1/3 avocado, as long as you stick to that your will not derail your weight loss efforts.

    Hi Chelsea, I've been watching all your videos and I am so impressed. I can totally relate to being on diets where I lose and then gain. I am thinking of seriously starting to eat this way you recommend. I am kind of afraid of gaining weight with eating carbs as I've cut them out so long, but also binge often on processed foods because of cutting carbs perhaps. I will continue to watch your videos. You are really helping me, thanks for your knowledge. Do you take vitamins?

    some foods i love that keep me healthy are popcorn (for low cal snacking), peanut butter powder, sweet potatoes, mushrooms, kale, collard greens, chard. i also use Sweet Drops in my coffee instead of sugar, and oil spray to reduce my use of cooking oil as much as possible. i also really like rice cakes with some peanut butter powder and cut up fruit, the apple cinnamon rice cakes are so good! lastly i drink a lotttt of tea, seltzer, coffee, and water to make sure i'm hydrated and also to kinda distract me from snacking on something i shouldnt be having.

      Try cooking without oil and reduce the processed food, just eat whole food and you should not have cravings for snacks

      @@luluandmeow i have tried cooking without oil, it works for most things but sometimes a little bit of oil spray is helpful. i eat mostly whole foods, verrrrry little processed food. i just really like snacks and i balance my diet so that i’m able to have them too
