Hiro came to Bend Oregon and helped make a menu for a sushi bar called deep. I worked in the back of the kitchen when he was there. And I was able to enjoy his creations often when the restaurant was opened. I went down a very deep road of sushi making at home with friends after that and have never looked back lol...hi five hiro!!!!
Used to work on urchin boats out of Santa Barbara, we sold to this guy a lot. Thanks for the look at the processing plant I always wondered where the urchins went and what happened to them. I hope Mr. Kawamura can find a market and processing method to make the small purples commercially viable, that would make him the god of Urchins not just the king, would save the industry since the little purples are killing the kelp beds.

That is what happens when you have a video pretty much advertising delicious uni to 39k people, bound to get many of them to purchase some of it. Wish I could buy some, but it ain't cheap.
I wonder if the small purple could be halved and cleaned but the row left in and sold as Uni product, the small size of the row made up for by having half an Urchin. I bet a lot of tasty things could be made with a half small purple, little Uni soup bowls or something steamed or roasted with the Uni in there as an ingredient? Sure would help if there was a profit to harvesting them since they are out of control after the starfish there natural predator's died off. If the small purples could be a product sold as the half Urchin on a tray like Uni is it would be very helpful, maybe try some recipes Hiro? People cook in Urchin shells the little purples could be the solution to a cheaper highly available but high quality urchin specificly for cooking in?

Oh wow they have the best catch too the red/brown sea urchins we call them in New Zealand 'Kina' - beautiful yummy Kina or Uni - sea urchins ❤️
