Just few quick notes: To put in a stone you should hold the round handle in your palm and use 2 fingers to pull the front stone holder towards the handle instead of unscrewing and moving the rear one. The rear one is usually only moved when you want to use different sized stones. It is also faster and easier to make sure you have enough tension on the stone so it is not moving.
The sharpener you received is the K03 model, the biggest (and most expensive) one they make. You also got a model with a few option accessories such as the base plate and "deluxe" arm lifting unit. They offer base units without those which are quite a bit cheaper. If you don't sharpen 12"+ long things you could go to their medium size sharpener the Kadet which can use all the same accessories as the K03 but is much smaller and quite a bit cheaper. Both of those models can sharpen things up to 7.5mm thick.
Their smallest sharpener, the Blitz Pro comes with specially milled clamps that can hold onto flats, FFGs, and various other grinds with ease and can sharpen smaller blades without needing different clamps. The clamps are superior to the stock K03/Kadet clamps IMO. The only problem is that they can only sharpen knives up to 4.5mm thick and around 10" in length which is the biggest con of the Blitz Pro. It also cannot use the accessories of the other models and currently only has an optional scissor cutting jig available.

I just want to provide a bit of clarification here; 7075 aluminum (which is what the knife-holding clips are made of) has a Rockwell hardness of around 54, which is well below the hardness of any steel used in knife blades. This fact alone means using tape on the knife to prevent scratching is totally unnecessary. Having said that though, tape may help to keep the knife stable in the clamps during sharpening, especially if not enough initial clamping pressure is applied.

I agree, I just picked up the KO3 pro and had to get the additional L adapters to be able to sharpen smaller blades like para3 and anything smaller. But it is an engineered masterpiece, craftsmanship is second to none.

Your stropping media is not good. Its particle size is all over the place as it breaks down quickly. Use diamond spray 1-3 microns. Strop lightly until smooth lines on the strop.

I received mine on 08/30/22 and can't say it was so smooth of an assembly. The box had been dropped on the corner and the wooden crate was busted. The logistics company that TSPROF.US used to fulfill the order put the tsprof box inside of a larger box with virtually no packing and when I received it from UPS the shipping tape was busted on both ends . Long story short the mechanical angle gauge was bent pretty bad which I blame on the shipper but the fact that the thumb screws that hold the unit to the weighted base would only thread in by hand about one third of the way and had to be tightened the rest of the way with pliers leaves me to wonder just what kind of quality control issues the company has. I am not happy with my purchase.
