- These Lemon Cookies Melt In Your Mouth! They are soft, light and refreshing. I'm warning ya, you will not be able to stop eating them. Honestly, you better double the recipe they are so good and they are also super inexpensive to make.
Lemon Cookies Recipe:
1 1/2 cups of all purpose flour
1/2 tsp of baking powder
pinch of salt
1 egg
1 stick of butter, softened
1 cup of granulated sugar
2 tbsp of fresh lemon juice
zest of 1 lemon
yellow food coloring (optional)
1/2 cup of powdered sugar to sprinkle on top
Bake in a preheated oven at 350 F for about 13 minutes.

We had boys night at the trailer my 2 grandsons came with friend and we baked zucchini bread 🍞. They and myself was so proud. They really enjoyed themselves. My oldest grandson (10) asked if he could come to the house 🏠 and make his favorite meal lasagna with Cesar salad 🥗 garlic 🍞 . I said you can come over and make it ALL by yourself he was ecstatic.
I only remember my grandma making 2 types of cookies one was the molasses cookie that you mention and another one I don’t know what it was. It was in between sugar cookie a biscuit and a hockey puck..lol if you got them the day she made them they were good the next day you could play hockey with them…lol

This is from your favorite Idaho Senior Missionaries that follows you. I am in love with anything lemon, and tomorrow my little four year old and I are going to make these. I am so excited. I have a request. I did a cooing with grandma class over zoom, this last year. It was so fun, but I really want some more ideas. Is there any way you would think about doing more of these fun recipes with the grandkids so we could get some more ideas. Just simple, easy cooking. What a treat for your grandkids and it could lead to the Griffith Grandkids Cook Book. You have a beautiful family. The girls are very sweet. I used to bring home things that I would want from my grandmas house too. Sadly our house burned down and lost most of her things. I was able to savage a few things. I would love to pass it along to my grandson. He prefers his PawPaw stuff, it’s ok. Maybe he might want it when he’s older.

Well 8 passages don’t go to see the family I have noticed about it. Because I watch them every time.
If you squeeze the lemon with cut side downward and one hand underneath to catch the pips that is an easy way, or flesh side down with a fork stabbed in and squeeze you get more juice. Either that or microwave for 10 seconds before cutting and squeezing.
All the grand kids are growing up so fast! You should redo all their hand prints somewhere and compare them. I LOVE anything lemon, I'll even eat them peeled like an orange. A tip for squeezing lemons if they are not very juicy put them in the microwave for a bout 10 seconds or roll it. I like to use a fork to juice it or put the cut side into my palm cut side up to help collect the seeds so they don't fall in .

Hey Jennifer, I watch one of your daughters channel ( Julie) and she purchased a gadget from Amazon that some how hooks up to her wall light and she is able to turn her bedroom wall lamp on with that gadget instead of turning the lamp on at the top. But she didn’t tell us what it is called, and I don’t know what to look for on Amazon. Would you by any chance know the name of that gadget, or could you find out what it is called so I can maybe order one. And I bet those cookies were amazing. It is getting fall-like weather here today in Massachusetts and you had to mention molasses cookies haha they are so yummy and I used to make them with my grandmother molasses cookies and also hermit cookies now I wish I had some molasses in the pantry
