Sweet tea brined pork chop
Brine is:
4 cups water
1/4 cup sugar
3 tbsp salt
1 tbsp molasses
1 bay leaf
pinch black pepper
4 black tea bags
Bring all that to a boil, cool, and then use to brine ~1.5-2lbs pork chops. We sous vide for a couple hours, season as preferred (salt & pepper, BFF, BBQ rub, etc.), and finish on the flat top, but grilling over charcoal is amazing as well! Pairs great with roasted sweet potatoes and cinnamon apples.
This was my dad's sunday morning specialty back in the 60s. Simple dish good memories, thanks 👍🍻
I’ve made these with Canadian bacon and Swiss cheese, served over a bed of hash browns. I don’t think you could go wrong whatever meat you use. I’m a little hungry right now.
In Canada we just have regular bacon.

March: Orange Chicken. Use Sam's mom lemon chicken recipe but replace the frozen lemon concentrate with pulp free frozen orange juice. Add large chunks of white onion, red and yellow bell peppers, and pineapple chunks with the liquid under the chicken before you put it in the oven. Bake until the chicken reaches 165. Serve with white rice. My family loves this.

When bologna puffs up like that, I pierce it to make sure it fries evenly on both sides.
March recipe: Bierocks
1. Preheat oven or air fryer to 375
2. Make a bread dough
3. Cook the filling in a pan all together(ground beef, shredded cabbage or Sauerkraut, Cheddar cheese, B.F.F., Chopped onion)
4. Make small dough balls
5. Put mixture in the dough to make a pocket of filling inside.
6. Bake until golden brown
We make these all the time. Pro-tip: Flip the muffin pan over, wrap bacon around each one, par-bake till firm. Remove bacon cups, flip pan back over, add bacon egg chz green onions seasoning. Bake till desired doneness. Serve with hollandaise, hot sauce and toast

2 green peppers sliced thin
1 large inion sliced thin
2 small italian hot sausage links uncased
provolone cheese
hoagie rolls
fry peppers and onion till soft and set aside. crumble sausage and fry till done.
add pepper and onions back in pan and mix together scramble eggs and add to
mix cook till desired doneness on eggs. hollow out hoagie rolls and put in provolone cheese then egg mix. s&p as needed.

March ; bacon wrapped deep fried pickle.
Ingredients
Pickle spears
Bacon
Pancake mix
Wrap each pickle spears in a piece of thin sliced bacon, using a toothpick at each end.
Mix up some pancake batter, I use the store bought stuff.
Drop each pickle spears in the batter to fully coat each one.
Cook in 350 to 400 degree oil for 5 to 7 minutes and enjoy. Watch out for the toothpicks sparky.
Thank you so much Sam for this idea. I did not have any bologna. However, I use thin cut lunchmeat ham (no need to pre cook ham). I put the ham in the cup, added a small amount of chipotle sauce, then the egg, then cheese, then cilantro and green onions, salt and pepper. These turned out amazing my kids love them so much you can do with a muffin cup tray. You rock Sam!

Halushki - A quick Pennsylvania Dutch Coal Region noodle dish
1 head cabbage
1 package wide noodles
Onions to taste (about 1 large)
Butter (about 1 stick)
Salt and pepper
Cook wide noodles and drain. Cut up cabbage, onions, add butter (and a little water if necessary). Cook until cabbage is done, making sure no water remains (5 to 10 minutes). Pour cabbage and onions over noodles and mix well. Add salt and pepper. Enjoy.
I know this is a very simple dip, but we love it. Especially in the morning over toast or eggs, it’s delicious. Dad’s HOT dip: 1. Warm 2 lb Velveta in a microwave. 2. Add the following, all at once, to the melted cheese: 1 medium diced white onion, an entire can of medium Rotels (juice and all), a can of green chili’s and as much pickled diced jalapenos as you want. ( I like it spicy so I usually add a quarter cup of peppers) 3. Continue to heat the mixture until hot. It’s good hot, but it’s way better when reheated the next morning and served over toast and eggs. That’s it! Enjoy your video!

You should really make some jerky…here’s a decent recipe.
Basic(ish) Jerky
Approximately 3-5# lean meat. Venison or beef trimmed of excess fat. 1/4 slices against the grain. Put in freezer for a bit to make cutting easier.
1/4 cup soy sauce
1/4 cup wash-your-sister sauce.
3/4 cup of beer or Dr. Pepper (I use IPA)
2 tsp garlic powder
2 tsb onion powder
1 Tbsp red pepper flakes
1-2 Tbsp coarse black pepper
1 Tbsp cayenne pepper
3 Tbsp honey
All ingredients can be adjusted to your liking, it’s just jerky!
Mix all ingredients and meat in a large mixing bowl with your hands, gloves optional if you’re afraid.
Put in 1 gallon ziplock over night in refrigerator.
Lay on paper towels and dry excess moisture.
Here’s the secret…cold smoke 1-2 hours on your grill or smoker. Easiest way is to use a pellet tube rather than using the actual grill. Try and keep the smoking tube as far away as you can to keep the temp of the meat down.
Then finish in a standard dehydrator until it’s to the dryness of your liking.
Note: cutting semi frozen meat would be much easier with a Sam The Cooking Guy knife! (Hint hint)

The ultimate jersey breakfast sandwich...
-2 pieces of french toast made with thick brioche bread
- a few slices of fried porkroll (real taylor brand porkroll from trenton nj)
- a Fried egg seasoned properly
- a slice or two of american cheese
- a nice chunk of hash brown
Build all of this into a sandwich and coat the insides with a healthy amount of fresh hollandaise sauce. Its a mouthful but the mux of flavors are unreal!

1 Baked potato
1-2 slices of Swiss cheese
Butter
Salt & pepper
2-3 Eggs
Cook baked potato & slice open add
Butter, Salt & pepper to taste
add a few slices of Swiss cheese and top with two or three fried eggs over easy.
That simple & so delicious! We love having them for breakfast.
Another great one is Dinosaur Eggs. Bake large potatoes until nearly done, cut off about 1/3 of the potato, (save for potato wedges or something), scoop out a few spoonfuls of potato to make a little hole. Add some chopped cooked bacon, then drop in an egg. Add cheese if you want, bake until eggs are set. Serve with butter and hot sauce
We do this almost exactly but with thin sliced pork roll (Taylor Ham), everything bagel seasoning add some hot sauce or hot honey and it's yum for the tum time.
I grew up eating fried baloney sandwiches. We used to buy the big log of baloney and slice it ourselves, so instead of thin slices from a package, we had thicker slices. My dad would fry baloney with eggs and home fries So good I still make that once in a while

Instead of allowing it to cup, we always made short (1") cuts 5-6 times around it. That's if you want it at least semi-flat.

Sticking with the depression theme, how about "City Chicken" made in the coal region of Pennsylvania when Chicken was scarce during the depression. Alternating the meat on a stick gave the look of Chicken:
Veal and pork cubes. You alternate them on the stick/skewer. Then dip in egg then bread crumbs and fry to brown. Then arrange in roaster with lid. Bake 350 for 45 minutes
Late 60’s early 70’s, when my mom worked swing shift, dad made fried baloney with peanut butter on toast. Best dinner ever!
March: make a Porchetta, that is a pork shoulder inside a rolled pork belly, with no bones. Or a special cut of the pork belly that includes the pork shoulder still attached with no bones.
Season with salt, pepper, dried rosemary, and lemon zest. Cook in the oven at 300f until done, and then at 500f until the pork skin has crisped up. When serving, attempt to cut it kind of thin, and then chop up any of the pork cracklings.
Put it in a toasted Italian seasoned focaccia or ciabatta roll, with green salsa Verde.
Green salsa Verde is like red salsa, but made with tomatillo instead of tomato.
Dip the sandwich into some yellow mustard when eating.

Made it with bacon, because I didn't have any baloney in the house. Added a tablespoon of pulled pork I had left over to each cup. Good stuff! Now I need to pick up some thick-cut baloney from the deli counter this weekend.
Man, as soon as you started this recipe I thought about making a “nest” with hash brown potatoes, like a nest! Yum

Pizza dough
1 tub flavored cream cheese, I used onion & chive
precooked chicken, or steak
1 cup shredded cheese of your choice
1 Teaspoon BFF
Preheat oven to 400 degrees. Put parchment paper on a baking pan. Roll out dough spread cream over dough, arrange chicken, shrimp or steak and cheese and sprinkle BFF on top. Roll up and slice and place pieces on baking sheet and bake for 15-20 minutes until brown. I serve with a garlic ranch
I will try again....MARCH: ANOTHER VIEWER MADE IT AND LOVED IT!!!! Mom's pepper steak, simple and delicious!!! Cut choice of meat into bite sized strips ( we use sirloin ) cut green pepper into long slices ( top to bottom ) put meat and pepper into skillet with a little oil and fry until browned and softened with a good hit of BFF. Have a pot with cream of mushroom soup and only half a can of water ( so its thicker ) heated up and dump everything in the skillet into the soup. Meat, peppers and grease. Simmer for 15-20 minutes and server over Uncle Bucks Long grain wild rice.....AWSOME!!!! Defiantly legit!!!!

I used this technique but instead of using baloney I used Prosciutto wrapped around the egg. It's absolutely divine. But very easy to burn the Prosciutto in the oven if you're not careful but totally worth it.

Comfort sandwich
3 slices of bread
Peanut butter
Sliced banana
Strawberry jam
Soft butter
Spread peanut butter on one piece of bread and top with sliced banana and 2nd piece of bread. Then spread peanut butter on the other side of the original piece of bread, then a layer of strawberry jam followed by the 3rd slice of bread. Basically a 3 layer sandwich. Then butter and lightly toast both sides. Slice and serve with a fork.
Alternatively you can beat one egg, then dip the sandwich and fry Ala French toast style and serve with warm maple syrup.
Wow, so simple, but looks so good. Definitely going to try these.

Chili Browns!
Buy store bought hash browns or make your own.. cook until golden brown
Buy or make your favorite chili, with or without beans...mild or hot
Grate some cheddar cheese... or any cheese you like
Put down the hash browns
Cover with chili and cheese (onions optional)
Broil to melt cheese
Eat!

I was expecting his tweak to be some pepper flakes. But paprika is ok, too. Since it's just me, myself, and I, this recipe can be shrunk so I can use a smaller cupcake pan. That's always good.

Simple Mexican style rice! My version is called gringo rice!
6-8 serving size instant brown rice cooked to box instructions (microwave)
One chub chorizo (1lb)
Cooked down.
Add rice to pan with chorizo
And we mix!
Season to taste,salt &pepper
garnish with chopped cilantro
Could be done with riced cauliflower steamed and then pan fried to give it a crispier texture.

Love the channel, the chaos is great! Bbq pulled pork nachos. But you have to do candied jalapeños with it. (Pulled pork, misc cheeses, little bit of Pico, candied jalapeños, light drizzle of bbq sauce) we do it all the time. The wife and I have a could lbs of smoked pulled pork butt in the freezer at all times.

Inspirational! I quickly assembled a recipe with many variations based on egg in deli ham cups. Doesn't need to be a muffin pan, could be a twice baked potato or yam. or a scooped out avocado with guacamole as the topping sauce. And, the egg need not be cooked in the oven with the meat and trimmings, instead make a soft boiled egg while baking, add it when the the oven contents are ready. Can't wait for breakfast;-)
sam i want a knife so here’s a recipe for march: rasta pasta with jerk salmon
Cook onion, and bell pepper (any colour) until soft add garlic
cook spaghetti
season salmon with cayenne, and garlic powder onion powder, salt, pepper, put jerk paste marinade on top cook in oven or air fryer i use air fryer because it’s way faster
add cream to the vegetables mix in jerk marinade add Parm until thicken
add the spaghetti noodles serve with the piece of salmon on top and more Parm cheese

At 5:18 it looks like there is a little something bright green on the tops of the egg cups! Now I want to make these but add green onions or some sweet peppers on top! Yummy 😋
March: Buffalo Chicken Mozzarella sticks
Combine in mixing bowl
1 rotisserie chicken
1 block cream cheese
1/2 bottle of Frank’s red hot
2 cups shredded cheddar
1 cup red onions
1 cup chopped celery
1 cup blue cheese crumbles
Place in baking dish
Bake at 350 around 20 min
Let cool then freeze
Pull out and let soften slightly so it doesn’t crack when cutting into rectangles
Double bread with flour, egg wash and Italian bread crumbs
Fry at 350 till golden brown
Sounds great, I just need to pickup some bologna. Can't wait until tomorrow morning. Keep up the good work.

March - Wisconsin Dublin Coddle
1lb bacon
1pkg bratwurst
3lbs potatoes
1 head of cabbage
1 yellow onion
BFF
One can of beer
Cut up bacon and fry… remove bacon, fry brats for color. In a crock pot or Dutch oven - laying cut cabbage initial wedges, cut onion into wedges, add bacon and brats on top of cabbage/onion… second with salt, pepper, garlic… and then top a beer over the mixture (Guinness beer would be great - but I just use what I have… typically Leinenkugel's because I’m from Wisconsin.)
Cook on high for 2-3hrs (crockpot) until potatoes are fork tender.
Seems so simple, but i don't think I would have thought of this in a million years!
One cut from the middle out keeps the bubble in the middle from happening and you get a better char on the bologna

MARCH: Smoked queso! I know, there's a million of these out there, but everyone who's had this one has loved it. Worth a shot!
Velveeta brick
Cream cheese brick
Handful of shredded cheese (whatever you've got)
Jar of fire roasted peppers
Small jar of ol del paso jalapeños
Small yellow onion
Crushed tomatoes in chilli seasoning with liquid
Ground beef made with taco seasoning (like for white people taco night)
Can of evaporated milk
1 tsp of: cumin, chilli smoked paprika, oregano, salt
Smoke in smoker at 250-300 from the start, mix as you go. Once all melted and together, smoke another hour and good to go.
The perfect Easter Breakfast, we added a drop of Hollandaise

March: Crawfish Étouffée
1 stick butter
1/4-1/2 cup set rising flour
1 medium onion (white or yellow)
1 clove garlic
1 can chicken broth (14.5 oz)
Seasoning: salt, pepper, Tony’s
1lb crawfish tails
Over medium heat: melt butter. Add flour and constantly stir to make medium brown roux. Add onion and garlic and cook until tender. Add crawfish, stir, and add chicken broth and seasoning (to taste). Add as much chicken broth or water as needed to reach your desired consistency. Bring to a boil then simmer on low for 20 minutes. Serve over rice.
Wild new England fiddleheads!!! Boil for 8-10 mins! Drain then add to frying pan with melted butter,garlic cook for a few mins then add salt/pepper!! They make a great side dish n yummy af....
Hey, I made those but I’m in Jersey so I make it with pork rolls instead of bologna. That reminds me of next month where I ask you how to jazz up a peanut butter and jelly sandwich.

I do this with bacon on the Traeger. Family favorite!
Sourdough Lobster BTL. Cut uncooked lobster into bite sized bites, place on uncooked Bacon on a pan, the place preferred cheese over the lobster, bacon strips. Bake for 10 to 12 minutes. While waiting choose your bread and toast, and slice tomato's and prepare lettuces. This is one of the best BLLT's I've had.
Fried baloney and egg sandwiches have been a staple in my family forever.
I'm going to make a South Jersey version with pork roll and duck eggs!
I took the chaffle idea, and experimented. I figured out that a waffle iron is all you need to make a perfect breakfast sandwich. A mini waffle iron, that is. You can use it to toast your English muffins, cook your beaten egg ( mine the added cheese) heat up a precooked sausage patty (I used Jimmy Dean precooked breakfast sausage patties), and it doesn't take very long at all. I used and olive oil spray on my muffins, and put them on the iron, split side to each griddle on the iron. Removed them when I thought they were good enough, then layered the American cheese on the bottom half. Then, I beat the eggs (one at a time) to cook on the iron. I also salted and peppered the eggs. I used very small eggs, because larger ones will boil over. I also leave the lid up for roughly half a minute before closing. I think it helps to keep the eggs from spilling over. Once the egg starts to puff up the lid, give it about 10 more seconds, and it's ready. I'd say a minute per egg, or so. Now, I heated up the sausage in the microwave, as per the instructions, but I don't see why you couldn't heat it up on the iron. I work in a welding and machine shop, so I was cutting corners a bit, trying not to get caught by the bosses lol. I put the patties on top of the egg, and put the lids of the muffins on. Did three sandwiches in roughly 10 minutes. You can also put the sandwiches in the microwave for roughly 20 seconds, to reheat a little, and melt the cheese a bit more. They pretty much tasted exactly like a Sausage, Egg, and Cheese McMuffin. Very delicious!
March Recipe: PBJ & Egg Sandwich
Ingredients:
Peanut Butter (personal preference is JIF)
Jelly (grape or strawberry, not anything boujee)
Egg
Plain white bread
Instructions:
Scramble or fry and egg
Toast two slices of plain white bread in toaster
Spread peanut butter and jelly LIBERALLY on your toast
Add your egg and BOOM, you have just created a simple, odd, and delicious sandwich from my childhood!
March: smoked st louis ribs
-Get your ribs and remove the silverskin
-Use plain mustard as a binder for the seasoning
Season liberally with your favorite bbq seasoning. I use the smokehouse maple from mccormick (my wife likes that seasoning)
-allow to adhere for 30 minutes.
-smoke ribs for 2 hours between 250F and 275F, or until a mahogany color (i always use oak for smoking ribs)
-spritz ribs once after the first hour with a 1:1 ratio of water and apple cider vinegar
-once color is achieved, wrap in foil with several pads of butter, brown sugar, and drizzle of honey on the meat side
-put ribs back in smoker meat side down for another 2 hours, or until tender
-optional: unwrap ribs and glaze with favorite bbq sauce, leaving the ribs in the smoker long enough for the sauce to thicken
-serve
