    最近看到好多人做,妈妈也让我尝试做。这马来西亚传统甜点有好多名字,曼煎糕/Manchang Kuih/Peanut Pancake/Apam Balik Kacang, Ban Chien Kiuh。 研究尝试了很多食谱,终于找到怎么让他保持脆久些。不只是食谱重要,连煎的方式也很关键。我甚至去参考了路边摊卖家的影片,“偷师偷师”看他们煎的方式。果然有效,成品蛮满意的,脆到掉渣了。加上里面自烤的新鲜花生香味和奶油玉米,童年的味道又回来了。
    Recently, saw a lot of people doing it, and my mother asked me to try it. This traditional Malaysian dessert has a lot of names, 曼煎糕/ Manchang Kuih/ Peanut Pancake/ Apam Balik Kacang/ Ban Chien Kiuh. Research and tried many recipes, and finally found how to keep them crispy for longer time. Not only is the recipe important, but the frying method is also critical. I even went to see the videos of sellers from roadside stalls, "Stealing their skill" haha, to see how they cook. Sure enough, the finished product is quite satisfactory, and it's crispy till crumbs drop all over. With the smell of freshly roasted peanuts and creamy corn, the nostalgic taste of childhood is back.

    146克 中筋面粉
    74克 水磨粘米粉
    50克 细纱糖
    3克 速溶酵母
    3克 苏打粉
    1克 盐
    102克 鸡蛋(2小)
    300毫升 水

    56克 有盐牛油

    »记得一定要休息面糊至少45分钟
    »记得要小火,
    »抹得很薄很薄哦, 抹走多余面糊直到不能再抹为止才算薄,看影片详情。

      Doris Jauk I can testify that this is a good recipe. You should try it. Remember to start on very low heat when you spread the batter. After spreading , then you can turn up the heat a little . Best of luck.

    I just tried out your recipe and made successfully made appam
    balik as per your detailed guide. Thank you for sharing this recipe. To those who are trying this out first time
    1) rice flour is a must
    2) use a bigger container to allow the batter to rise, if you intend to keep in the fridge overnight
    3) LOWEST heat is a must.....patience is required for good appam balik
    4) her tip of spreading the batter as thin as possible is a must follow tip

      Must use low heat, like that only u can spread the batter thinnly, watch video to see how I wipe off the excess until I cant wipe anymore, only consider as thin

    Thanks for this video. I always like thin ban Jian Kue. Especially Indonesian version.
    It has peanut, chocolate, sesame seeds and butter. A bit different from Singapore’s or Malaysia’s.

    Hi Wendy, the recipe works well and it tasted great with peanut! However, when I replaced peanut with sliced cheese, the skin became soft in the middle. Can you help to give some advice on how to make overall skin crispy even with cheese? Thanks so much!

      wow great, pls send photo after making. be sure to use low heat and apply as thin as possible, i wipe excess batter till cant wipe anymore only stop

    Thank you so much. I’m a new subscriber. Can you let us know how long these will stay crispy? And if left over, do you store them out of the fridge or in the fridge and can they be reheated in the oven? Or you need to finish the whole batch after making them. Thx so much.

      My crispy manchang kuih stay crispy even I film them for hours.
      It is recommended to eat this right after they are done. Store them in anyways also will make them soften as time goes by as the fillings inside is wet..u can reheat them though before eating, but the crispyness will not be the same as when its freshly fried

    Hi Wendy, how long the crispiness of the appam balik can hold before it turn soft? Have you did a test for this?

      I have mentioned in video, I made these for about one hour before filming, they are still crispy. For crispier result, u can let it sit rest overnight in fridge, next day take out to thaw abit before frying, crispy

      Apam balik pan is the one they usr to sell it at store?if that is that would be perfect right?theirs are nonstick too, or else it wont come out, trust me, I tried on other pans before
