@@divascancook yes the coating is everything. I was vegan but now I’m an occasional meat eater. Long story. Any way, I’m going to try your method one day this week. I don’t do dairy. I hope Almond Milk works for the gravy. And my ‘trick’ to good gravy is Chicken Broth or Vegetable Broth.

That's why I always add a few drops of hot sauce to my white gravy. It gives it a kick and a tang that is so delicious.
