Big tip: these people prepare beforehand. So I would suggest getting all the ingredients ready ( having the certain amount of milk prepared in a small bowl, etc ), clean up the mess that you make while preparing, and then start mixing everything/cooking/etc

when u fold be really gentle also add sugar very slowly to meringue because it can knock the air out of the meringue if u add it too fast and definitely use a spatula (perfect for folding) i've tried similar recipes to this (a really fluffy cake and a "featherlight" sponge, they are basically the same recipe just different forms) and it took me 2-3 times to get it just right

I would definitely turn the heat down at about 3 minutes into the first side cooking, the heat increases alot in that time so id reduce it a little for the 2nd 4 minute flip cycle. Pancakes are one of the hardest things to make from scratch, so easy to make them chalky. This seems like a risky endeavour

Maybe you are not mixing it correctly with the yellows. You have to do it just like the video, using those soft, round, botton to top movements. If you mix them too fast, too much, too hard, the air in the withes will escspe and you wont get the right consistence.
this never works for me idk why when I add the two (egg white and batter) the whipped egg whites deflate and it will turn out just like normal pancakes but a bit fluffier
maybe is the way you mix them??? notice how they part with the spatula to make sure the mix doesn't deflate. merengue is sooo delicate you have to make sure you keep the air in when mixing with the batter

It is very important to use enough baking powder, you can use more that 1g and you have to put it directly on flour

I would definitely turn the heat down at about 3 minutes into the first side cooking, the heat increases alot in that time so id reduce it a little for the 2nd 4 minute flip cycle. Pancakes are one of the hardest things to make from scratch, so easy to make them chalky. This seems like a risky endeavour

i always get my mixture too fluid so it just spreads like a regular pancake over the pan
My eggwhites are foamy enough but still....
Maybe you are not mixing it correctly with the yellows. You have to do it just like the video, using those soft, round, botton to top movements. If you mix them too fast, too much, too hard, the air in the withes will escspe and you wont get the right consistence.
I'm fasting but can't help looking at these videos. Now I'm 10x hungrier than before.😢

when I add the two (egg white and batter) the whipped egg whites deflate and it will turn out just like normal pancakes but a bit fluffier
maybe is the way you mix them??? notice how they part with the spatula to make sure the mix doesn't deflate. merengue is sooo delicate you have to make sure you keep the air in when mixing with the batter
