By the way guys, when the meringue is being folded into the dough, it is important to do it the way you see in the video, or search up how to fold in meringue- This method is used on order to keep the air in the dough so that the pancake will turn out fluffy; if you just mix it in instead of folding it in, you'll have a flatter and less fluffy soufflé pancake :) Edit: Thanks so much for the likes guys! I was actually to surprised to see her stirring the meringue as much as she did as that usually deflates it. She more stirred it in then she did folding but it worked.
just made this today, the taste was vey delicous airy, soft, light, and melts in your mouth, the only thing was i couldnt get it to fluff up like yours, mines deflated sadly but other than that great recipe
I have made them and honestly it’s soooo good. But I do have some advice to make them taste better : - do not hesitate to exceed the time indicated to properly form your meringue. - if your meringue is not firm enough, leave it in the fridge for 15-20 minutes or your pancakes will not be puffy. - if you choose to fry them in a pan, cover them and don't leave them too long. In any case it is definitely a recipe to redo. Thanks!

Или в духовке запечь в формочке с дном. Получится нечто такое же воздушное и пухлое, но без муки и сахара)

Tips: The egg has to be at room temperature. Also, when you are adding the 2 mixtures together, add them quickly, and get them on the pan quickly or it won't be able to become “fluffy” and it won't work. If you already mix one of the mixtures for 3 minutes, and it is not fluffy yet, keep on mixing. THE MOST IMPORTANT THING IS TO MAKE SURE THE EGG IS AT ROOM TEMPERATURE or else it might not work. Remember to only add 20 grams of sugar, not 40. For the cake flour, I took 1 tablespoon of all purpose flour. Then, I took out 2 (so basically I used a 1/8 measuring tool and took out all purpose flour with the 1/8 meausuring tool 2 times) 1/8 tablespoons of all purpose flour. I replaced the 2 1/8 purpose flour with 2 1/8 tablespoons of cornstarch. Finally, I sifted them together. You can also just mix them if you don't have sifting tools. If you guys were confused on when I said take out two, I mean you take out 1/8 of a tablespoon of cake flour. And u do that twice. Then you replace it with the same amount you just took out. (You replace it with cornstarch ) sorry this is kinda hard to explain.

I used unbleached all-purpose flour and it still tasted soft and tender, although I had to double the amount of milk to achieve the desired consistency (seems like my flours absorb more water than other types of flours do). I used cold eggs which might be the reason that my pancakes were not that "fluffy" but they still looked and tasted delicious. I'll try the room temperature method next time. One shortcut to get eggs at room temperature quickly is to put eggs in warm water for a few minutes. For those who want to make "cake flour" at home: Get 1 cup of all-purpose flour. Remove 2 tablespoon of flour and replace with 2 tablespoon of cornstarch. Sift to make them mix well. Now you get 1 cup of cake flour. (For reference: 1 cup of flour is about 120g. 1 tablespoon of flour = 8g. 1 tablespoon cornstarch = 7.5g.) Simple as that. (But again, I used all-purpose flour only and it already tasted great.) Finally, it's very thoughtful for the author to offer the accurate timing of adding sugar; however, due to the variety of mixer wattage and beater shapes, not every mixer works exactly the same way. It's better to add sugar based on the meringue's status rather than time duration. Thanks again for this wonderful recipe. This is the first time that I successfully make TENDER pancakes! :)

This is technique they’re using stems from classic macaron baking. It seems counterintuitive to you, because you feel like it deflates the whites but in actuality if you tried to incorporate such a delicate thing to the much heavier and thicker paste of the yolk and flour that would deflate the whites. You can see from the result that, no, the whites didn’t deflate even after cooking. There is no flaw in the process. Please follow this recipe and make something delicious and also with the correct technique.

With practice, you can make it better than me.
Adding a bit of creme of tartar will help stabilize the meringue better and will help with the pancake to fluff up

Remove 2 tablespoon of flour and replace with 2 tablespoon of cornstarch. Sift to make them mix well. Now you get 1 cup of cake flour. (For reference: 1 cup of flour is about 120g. 1 tablespoon of flour = 8g. 1 tablespoon cornstarch = 7.5g.) Simple as that. (But again, I used all-purpose flour only and it already tasted great.) Finally, it's very thoughtful for the author to offer the accurate timing of adding sugar; however, due to the variety of mixer wattage and beater shapes, not every mixer works exactly the same way. It's better to add sugar based on the meringue's status rather than time duration. Thanks again for this wonderful recipe. This is the first time that I successfully make TENDER pancakes! :)
