    Thank you Steve! It is sad and a little infuriating that entities keep trying to convince us that there are 'miracle' carby foods that won't spike our sugars. Rice is rice and it raises blood sugar. I'm sticking with the cauliflower. PLEASE stand by your determination not to do this to yourself again😁

      I buy Old Elpaso Tortillas. They have 2 enzymes in them that works. I can eat one at a meal w/o spiking. But still wouldnt eat them every day but every once in a while is a treat

      @@cassieoz1702 OMG why are some of y’all so fixated on “you have to eat boring food only” for? Like seriously so what if people want to eat what they used to eat and still lose weight? We are an advanced species and should be able to invent anything that allows us to enjoy our lives.. if someone can find loop holes why is it hurting you?

      @@everythingyousayiscorrectWhoa! Talk about over-interpreting what I said. I'm not 'fixated' and certainly don't eat boring food, I just don't eat ultraprocessed stuff. And everyone is entitled to eat what they want to but I see so many people stalled or still complaining of hunger or cravings and not realising that the hyperpalatable 'miracle' products they've been sold may be some of the issue.

    I’m thinking if you freeze it, thaw it freeze, take it for a 20 mile car ride, put back in freezer, thaw, let it sit in fridge for 3 days and eat at night during a full moon. JK Lol.     That was enlightening ! I have tried the black rice which is also said to be just fine for us, but now I doubt it. I don't have a glucose monitor so I'm with you, back to cauliflower rice 🤣

    Wow! Steve...you are braver than me. Raised in Louisiana. Lived > 38 years in NM during/after military service. Have always been around some very tasty and now known unhealthy carb and seed-oil loaded foods. I have not eaten (real) rice in about 3 years now, due to realizing the negative blood glucose impact (for me). Rarely eat potatoes either. I still occasionally have cheese quesedillas using the so-called low or no carb store bought tortillas, but even those seem to negatively impact my blood glucose. I think I'm gonna need to find one of your keto or carnivore tortilla recipes if I want to continue eating NM type tortillas. I love cauliflower rice, so I'm good there. All this to say, thanks for all you do to help us decide whether to even test out carb laden foods on ourselves. You and your family absolutely rock! ❤

    Hey Steve, I feel your frustration and agree…enough rice testing already!! Take it from me, a Chinese Canadian who loves all the comfort ‘carby’ foods of my childhood, I am very satisfied with (cauliflower) rice stir fries…especially when you throw in eggs, garlic shrimps, etc…Yummers!

As much as this will irritate people, I am of the mind, to accept what can be eaten, and stop trying to fill my diet with the old way of eating. I can say keto is so much easier today, than it was 25 years ago. Thank you for all your help, for us.

    What’s so frustrating about this is that a diabetic (I’m a type 2) might take them at their word and end up harming themselves.
    Anecdotally speaking, whenever your BG spikes on a food, my BG for the same food has about 3x the BG spike.
    So had I trusted this rice and its claims I might have had a 200 point BG increase. Based on my rice eating experience, in general, that’s about right.
    It’s so sad that they risk the health of others. Thank you for saving me the risk. ❤

    I like all hearts of palm for starch substitutions. And I like cauliflower rice . I cannot have grains or gluten and I appreciate your efforts to keep us on the right path with sugars.

    I;m a type 2 diabetic and heard about this purple rice and was a little excited. Thank you, Steve, for saving me from the disappointment. I really appreciate it.
    For a long time, I was disappointed with the flavor of cauliflower rice, but I saw on another keto channel that after cooking the c-rice, you should dry fry it to cook off all the moisture and that really works. I can then add herbs and spices and it really does pass for rice. Thank you, again.

    Thank you, Steve. I was about to test this cultivar myself and almost ordered a bag but now I see there is absolutely no point. Honestly, I had huge doubts about the alleged glycemic response but still was quite curious.

    I really appreciate these tests you do - very informative. As a result of your tests I've stopped eating black rice (or any other type of rice) and potatoes, even if they have been left in my fridge for 24 hours supposedly turning them into resistant starches.

    Hey Steve. Again, thanks for doing more testing. Much appreciated. Just in case you aren’t aware, another alternative for “rice”…… Mel from Cooking with Mel made “rice” with hemp hearts. It was quite tasty. Have made it a few times. And of course you can modify the veggies that you put in it. I used hearts of palm in mine to bulk it up a bit.

    Im a T1D (for 27 years) and Asian.
    I love the taste of purple rice (when mixed with jasmine)
    The way to reduce carbs and the sugar spike is to mix a tablespoon of purple/black rice to whatever ammount of jasmine rice you're having.
    Also you should wash the rice and drain till the water runs clear (7-12 times), before cooking!
    you can soak the black rice overnight in cold water and it removes alot of the starch and sugar.
    I really hope these tips help out someone!

    When you were talking about the texture I have noticed when I make it at home or what I've had in the restaurant has a definite chew to it I found it rather enjoyable. And I agree the taste is not the same at all.

    Steve, one more method to try, if you are up for it is cooking rice in lots of water when rice is 95% or so done drain the water (which will drain out majority of the starch). People in India use this method. BTW, the rest of the 5%rice will cook in the residual heat.

    Dang...I'm from Louisiana, and rice is a huge part of Cajun cookery. Not having rice is probably the biggest lack I feel on the keto diet....but...the data is the data. Like you, I'll stick to riced cauliflower (I recommend Fullgreen...it tastes the most like "real rice" of the varieties of riced cauliflower I have tried.

    Thank you so much Steve for that informative video! My take is to stick with simpler foods. When eating the SAD diet.....so many times I was just 'craving' something (prob nutrition)....and with so many choices, I'm happier now with many less choices, hence, less is more. Theres definitely something to be said about the freedom of feeling satiated for hours after eating, yet not miserable and bloated with reflux into the next day. If you must have real rice occasionally, have a small portion & fill up on your meat and other keto friendly fare. Blessings friend!

    I have a brother-in-law, niece, and young neighbor man who all have type 1 diabetes. They can eat bread made from fresh milled grain without a problem. It is the most delicious and amazing bread! It is completely different than so called "whole wheat bread ". I have my own counter top mill, and I bake this bread every week. Yesterday I made it with spelt, hard red and hard white wheat berries. I made some loaves and some sandwich buns. I would love to send a couple buns to you, but I don't want to stress you out and make you do a video on it.

    It really sucks how all these companies and doctors and sales people will say whatever to sell their product even when it's detrimental to our goals. THANK YOU for bringing clarity. When I cheat, I cheat. But ya, I try to cheat minimum vs. maximum, chips vs. doughnuts. Anyways, you had the best advice at the end in your conclusion. BAD CARBS ARE BAD CARBS. GET OVER IT. IT'S THE WAY IT IS. I had so much better success when that was my attitude. Now that I cheat and I fudge, I've gained 20 pounds. lucky to have plateaued there. but still. 20 pounds is sadly 4 boxes of clothes that don't fit but I won't give up on them or me!!
    * One of my biggest cravings lessons. When I'm like starving hungry...that is when my cravings for garbage go through the roof. However, no matter what I eat, pizza or salad, on the other side of hunger is satiety. so I try to sternly remind myself that no matter what I'm craving, I'll just eat what I am supposed to and then guess what? I feel full. I feel find. I feel satisfied.

    Thank you for testing. I am very skeptical about claims for all rice and would never test purple rice or any other rice. I am not surprised or disappointed by your results. If I am going to eat rice it will be the rice I like and the way I like to eat it. That would be sushi even if I can have it only once in a while.

    O.k. you mentioned potatoes. I've found a way to make potato chips/ fries that didn't spike my glucose. Basically you peel the potato making the peelings long. Throw the potatoes away (or save them for others), Boil the skins in water for 10 minutes. Drain & pat dry. Then fry in your choice of oil ( I like to use olive oil) Put on paper towel, season & serve. When I eat regular fries my glucose can hit 155 / 160 But with the peeling fries the glucose has stayed between 104 to 118 depending on how much I eat. (My normal blood sugar is mid to upper 90's.) Perhaps this is a recipe you might like to try as the last of the last potato recipes.

    As a T2 diabetic....controlled by keto......this type of stuff infuriates me. Products being sold with grandiose promises for diabetics.
    I am keto, so there is no room on my plate for this, but my elderly parents would see this and think it is a viable option....but it definitely is not.

    I would never eat a bowl of rice that big anymore. A couple tablespoons in a dish might be ok. I love black rice once or twice a year.

    Steve - I’d like you to test Aldi’s Organic Soybean Pasta. It has 20g of total carbohydrates per serving, but also has 13g of fiber per serving. I eat it all the time & I’ve lost 150lbs on Keto. I don’t know if it spikes my blood sugar, but I went from 321lbs to 170lbs and I’m 62 years of age.

    Do you do three washes of your rice before cooking? Helps remove some starch. Traditionally black rice is added to a rice dish so you wouldnt get quite that effect. I've read that Mahatma rice is the best rice for glucose monitoring. So I will test that one but it would be interesting to try it with a SPRINKLING of black rice and oil popped Nagila Satva (Black Seed) and Curry powder

    Wow that was definitive. I have seen some shorts/videos that have claimed that taking exogenous ketones before a meal can blunt a glucose spike. Have you tried this?

      @@cynthiastratton1034 I may at some point test some of the supposed "hacks" like drinking apple cider vinegar before a meal, doing 40 air squats before a meal, a 10 minute walk after a meal, etc. The problem is that there are numerous other variables that can impact a glucose response.

    I would think freezing would have an effect, since at -10c and colder, ice crystals will act as tiny scissors. Thus digestion of the starch would be different.
    Cooling in the fridge, to me doesn't make sense, unless some sort of chemical reaction occurs.
    The whole resistant starch scenarios that I saw that make sense, only work by being in the freezer 24hrs beforehand, then thawed in the fridge.

    The "keto" labelled commercial breads or "keto" tortillas I get at Costco, I freeze them before use, toasted or not afterwards, I don't get a huge spike if I eat with other meat & fat and only eat 2 slices (like a grilled cheese with lots of butter) or only one tortilla.
    Eaten fresh the spike is higher. Consistently, I can even feel it.
    My only conclusion - freezing below -10c creates ice crystals that changes the starches at a molecular level. Since I only eat one portion a week, it's more like a (convenient) cheat meal.

    I **LOVE** cauliflower rice. I see no reason to even experiment with grain rice.

    Personally, even if it had had zero impact on your glucose it would be a no-fly food for me because the word engineered is a huge red flag.

    Your correct eating rice or pasta or white flour or potatoes are out out OUT no way for any diabetic.
