Thai Green Curry with Tofu
Serves 4
Paste:
1 tsp white pepper, toasted
1 tsp cumin seeds, toasted
1 tsp coriander seeds, toasted
1 inch galangal, sliced thinly
6 coriander/cilantro roots
2 lemongrass, sliced thinly
1 small bulb of garlic (about 10 cloves)
2 red onions
5 green chilies
12 green bird's eye chilies
Oil for frying
5 kaffir lime (makrut) leaves, bruised
5 Thai eggplant, quartered
200g snake beans, chopped into chunks
120g or 1 cup pea eggplant (terung pipit)
A handful of Thai basil
2 red chilies, sliced
400g or 1 large block of firm tofu, baked or fried
1.5 tsp salt or to taste
10g palm sugar or to taste
1 vegetable stock cube
3 cups water (or more according to your preference)
1 cup coconut cream

Can i use tulsi or normal basil instead? Also whats the sunstitute for kaffir leaves?
You can use other kinds of basil, it won't be 100% perfect and traditional but it is still a nice addition. If you use regular basil, do not add too much, you don't want to drown the other flavors in basil flavor. You can use regular lime leaves and rind/peel instead of makrut.
Hello! Just wondering how much paste would you use per 1 cup of coconut milk (for one batch of curry)? Green curry is my husband's fave and I make it for him every week. He had it out in a restaurant recently and the fresh paste tasted so much nicer than the tinned one. So I found your video! Thanks!

At what temperature should I bake the tofu and how long should I bake it for? Thanks so much
Thank you! I baked the tofu at 180°c on fanbake for about 25 minutes until golden. You can also fry the tofu, or add them in raw 😊
@@TheKampungVegan to fry the tofu should we add something before frying it? or just fry it with oil like that

It's definitely spicy! Haha. You can totally reduce the amount of chilies but the curry won't be as green 😂
