Summer in my off-grid kitchen- Harvesting and cooking from my vegetable garden

- Gardening and cooking with fresh ingredients is one of the reasons I love our life here. We have spent a lot of time in the garden over the last few weeks and enjoying the fruits of our labour. Here are some of the dishes we have been enjoying this summer. Please find some instructions below.
I'm sorry to say I don't really work with recipes, but rather ingredient lists. Most of my dishes rely on a basic understanding of cooking and baking. I hope the video gives some further insights in how to assemble these dishes. Feel free to ask questions in the comments.
Beet and carrot salad:
Beet
Carrot
Onion
Small clove of garlic
Olive oil, vinegar, salt and pepper
Parsley
Mint
Feta
(Borage flowers for garnish)
Courgette fritters, base ingredients:
Grated courgette
Finely chopped onion
Garlic (powder)
Salt and pepper to taste
1 or 2 eggs
Flour (I use a mix of chickpea and wheat flour)
Baking powder (1 teaspoon per cup of flour)
Splash of milk as needed
You can also add: chopped parsley or other green herbs, sweet corn, feta, tomato, peppers
Pickled beets:
Cooked beets
Vinegar, water (3 to 1 ratio)
Sugar (1 part)
Salt
Mustard seeds
Clove (1 per jar)
(I have not pickled many things, so Google more recipes to see what works for you)
Stuffed courgettes:
(Round) courgettes/zucchini
Red lentils (I use 1/4 cup per courgette)
Chorizo
Tomato (cubes or paste)
Onion
Garlic (powder)
Paprika (smoked if you have it)
Fresh parsley or oregano
Grated cheese
I bake it in the oven for 45 minutes to an hour
Quiche Lorraine:
Crust
Bacon
6/7 eggs
Cream or milk
Grated cheese
Other good options for quiche filling: spinach, chard, tomatoes
Green bean salad:
Cooked and chilled green beans
Beans (I used Catarino, similar to Borlotti. Also works well with black eyed peas)
Cherry tomatoes
Parsley (or cilantro)
(Pickled) Onion
Olive oil, vinegar, salt, pepper
Optional: bell pepper, finely chopped; feta
Simple tomato salad:
Beefsteak tomatoes, sliced
Parsley, basil, chives or spring onion, all finely chopped
Dress with olive oil, salt and pepper.

New here? My name is Lea and I live with my partner Maarten, our daughter Puck and toddler Bo on our land in Central Portugal. We left the rat race in the Netherlands in 2018 and moved south in our old campervan. Two years ago we bought land in Portugal that had been abandoned for several decades. After lots of hard work we now live in a beautiful yurt and keep ourselves busy growing our own vegetables as well as producing olive oil, wine and honey on a small scale. This channel documents all the different jobs we have to do, and sometimes some nice footage of this beautiful country we now call home.

And in case you are wondering, we are a cilantro tastes like soap family. I'm sure you can swap parsley for cilantro in all these dishes if that's your thing ;)
use less of it in a dish . I live in New Mexico USA here we cook lots of mexican foods I know people here who think it tastes like soap but they eat my food and say It did not taste like soap I use way less than what a recipe calls for

I grew up in Indiana with a farm and can remember the smells as I watch your harvest. Where I live now in an inner city in an Asian country, it's wonderful that you have made it possible on your land to grow such wonderful food. Thank you for sharing.

Lovely to see and hear you all. We eat much the same as you with fish as well at times. We have hot weather here too and I grow lettuce in a hanging basket in the shade. I have two baskets one with seeds and then the other we eat from and so on. Bo has grown so much and seems to love gardening. Loved the way he put one bean at a time into the basket instead of dumping them all in. I see that cheese isn't safe with him around. (Love it) Like this style of video, the length and the casual manner which shows your routine throughout the days. Wishing you all the best for your future.🥰

It’s so very heartwarming that the kids are involved and naturally following around the gardening process. When a parent risks things not going perfectly to allow them to participate, the reward is such a natural learning and passed on passion for such things.

I have to tell you how much I enjoyed seeing your children. They have grown so much and are just delightful. Your garden is thriving and I loved all the dishes that you prepared from your garden. Your insightfulness is always so pleasing for me to listen to. Right now I am enjoying a lot of chopped salads made with kale and cabbage and other fresh vegetables. I enjoy topping them with sliced chicken.

It’s an incredible amount of work but wow it really makes the watching so enjoyable. So fantastic!
Idea - add grapes and blackberries around your garden as a barrier to keep animals out . I love when mu kids helped plus learning. Also make a several garden plots so when one is harvest, canned, frozen you can start harvest from the second plot planted. Then put the chicken on the first plots to put add plots on then. Sheep shit make the best fertilizers and are big as your fist. Try and plant a tiepe for beans. You also can drink sheep milk, clean land, make farmers cheese, spin wool or trade it for something. You are doing a great job.
Everything you made is exactly what I think of when eating fresh from the garden. It’s vibrant and delicious but definitely an unusual assortment of simple recipes because you eat what’s producing. I have an abundance of courgette and no tomatoes. I have a homemade sandwich bread recipe just waiting for a tomato sandwich. The pickled beets look gorgeous!
I love an unusual assortment for dinner :) Hope you got some inspiration on what to do with all your courgette and that your tomatoes will be ready soon! I think these are some of the earliest we had so far, the weather has been kind for them.
My tiny garden got a late start this year but the tomatoes, cucumbers and Zucchini squash look promising. All your healthy yet simple summer recipes have inspired me to eat better.
You have come so far since I first started watching you. I remember your first chickens. 🐓 your hard work has paid off.

I love the squash fritters too. One thing I love (but don’t grow myself) is corn on the cob. It is also good in fritters.
I’d like to try the round squash, they looked so nice stuffed! We stuff a lot of peppers.

Wow! What a lovely 50 minutes viewing that was. Your channel was one of the first that i subscribed to and followed. I have disappeared for a while but it was amazing to see how much you have progressed with your lives. It's clearly hard work but so rewarding at the end i am sure.
I remember in one of your earlier videos you made three easy recipes for Zuchini/Courgette and my favourite then and still is now are the fritters. I LOVE them i noticed that your current recipe has changed slightly so i will give it a go too.
The growing garden looks amazing, and you are gardening wisely and to your own needs which isso important as it can become quite a chore otherwise.

So enjoyed the relaxed tone of this video Lea, I don't have a garden but enjoy the harvesting and preparing. Including the children is another blessed bonus, even to the tasting and fingering. Reminds me of cleaning the bowl with my fingers when I was a girl, now I have my Granddaughter 'helping' in the kitchen.

To retain the color in red beets and the striped ones do not cut off tail root and cut the bottom of the leaves leaving 2".
Beet leaves are wonderful, full of flavor and vitamins so wash them and remove about half the stalk then plunge in rapid boiling and lightly salted water until the leaves, like spinach, 'go soft. remove the root . Drain and flavor with spices and butter.

A great turkish dish is kiser similar to the lebanese tabuleh. Ingreadients are parsley mint paprokas tomatos and bulgur(cracked wheat ) with olive oil and lemon. Afiet olsun. Bon apetit in turkish.

A favorite salad of mine is Potato salad and you are growing all the ingredients. Do you make your own mayonnaise from your olive oil and eggs? Boil new potatoes, cut into cubes. Boil egg till the yoke is hard. Peel the egg and remove the yoke. Mash the egg yoke, add a bit of vinegar and mix with mayonnaise to make the dressing. Cut the white into small pieces, mix the potatoes, mayonnaise, and egg together. Some of your pickled onion would be a good addition.
Dont know if you do this or not, but grinding egg shells is good to give back to the chickens in helping them produce some of the next egg shells. If you put it mixed with the feed it works really the best and not wasted by throwing on the ground.

The flowers Are beautiful so is the vegtable garden. The children are growing.
Ever think of using Raised Beds? Square Foot Gardening is much easier, less work, less water. A 4ft by 4 feet by 4ft deep can yield a huge amount of produce!
I devoured that book! It worked well for my small garden. The best part was learning about succession planting and how to use vertical growing methods. Growing up, we had a huge garden because we were growing food for the entire year.
Lea uses Portuguese flood irrigation which wouldn’t work with raised beds I don’t think and has reduced the size of her garden from earlier years as she was overwhelmed with volume of produce so I don’t anticipate she needs to increase yield :)
I prefer growing in the ground, it’s easier to do with what we can buy here :)

I love fresh vegetables as well , right from the garden .. I live in an apt. so grow some veggies in containers.. love them they taste better than from the store.

Hoi! Zo leuk om jouw recepten te zien als inspiratie! Ik heb ook een moestuin met huisje in Rotterdam en experimenteel ook veel met groenten en simpele gerechten. Die courgette-koekjes en bonensalades zijn heerlijk! Ook de chorizo lekker uitbakken en met een beetje gekookte aardappelen een frittata van maken. Of op een broodje met een beetje gesmolten witte kaas of mozzarella en wat blaadjes uit de tuin. Met portugese queijo de Oveilha en zomerpostelein ook een keer gemaakt en dat was heerlijk! Mijn favoriet is nu sate van courgettes met goede satesaus van de toko. Ik weet uit ervaring dat als ik lang weg ben uit Nederland ik toch de sambal en pittige gerechten mis. Heel eenvoudig; goede gedroogde satesaus van de toko door je vrienden uit Nederland laten meenemen. Sate maken van courgette en stukjes kip om en om. Grillen op de bbq of grillpan. En smullen maar!
When I would have zucchini coming out my eyeballs, I would shred it and make zucchini bread which we would eat or freeze. I also bagged the shredded zucchini into recipe portions and froze them. A friend who was a wiz at canning would can her zucchini (cubed) for use in stews and soups later. My kids liked thin sliced zucchini steamed with other fresh veggies as long as there was plenty of thinly sliced onion in the mixture. Loved eating out of my garden!
I’ve started making some zucchini bread as well, so far it’s a big hit! Bo loves just plain fried zucchini like I do, but Puck is not a fan 😅

This was a really relaxing yet engaging video. I have had a very slow start and have only just had sunshine in the last 7 days (I still don't get above 70 F) but I do have a good amount of green beans and lettuce. I have been making salad nicoise a lot lately.
Also the first year for us that we have round courgettes. They grow fast and are delicious!

I always like your creativity in the kitchen. I’m amazed with the lovely dishes you produce with a knife and a spoon. The round zucchini is very interesting. I can see them in a variety of oven dishes.

I make a zucchini pizza. The crust is shredded zucchini, flour and spices. The toppings are typical pizza toppings complete with some mozzarella cheese.
Loved the pace of this video and the accompanying music. Recipes were great, simple pure food. Nothing better than eating fresh from your own garden. Food rich in nutrients and bursting with flavour. Your garden is a credit to your hard work and patience, trying out ways to improve and learning along the way what works best for your needs. Hello Lea and it was really nice to see you and your family again. Your challenge with the cucumber plants is, and here comes the latin name: Tetranychidae (my translation showed me "Spider mites", and I dont if that is correct so therefore the latin name). Our favorite summer recipe is tomatoes in different variations - we love to roast slices and eat them with fish, meat og vegetables, and I also season my food a lot. All the best to you and your family.
Yes, thank you! I checked, and that’s definitely the issue. I’ll look up what I can do about it. I did notice they do better now that we have the shade cloth on there, and they’re actually making cucumbers now :)

Loved this vlog. Meals looked delicious. I would be very happy eating at your table. A lot of my garden has fallen prey to snails and slugs and the beetles. A bit worried that I haven 't seen a single caterpillar yet this year. I'm still enjoying my small harvest though.
You need to be hiring a young gardner who lives nearby. They will sort the land out and plant what needs to be planted and help the plants then grow. It hard to do that alone. Get someone in to do it. It won't cost u much. But u will reap the reward of it when u have lots of vegetables growing

Try putting your veggie water on the greenhouse veggies, and do you crush up your egg shells and add them to the garden?
I think the leaves in the greenhouse looks like powdery mildew, probably from the plastic, shade cloth would be better for the warmer months. I love those pretty beets, I’ve never seen them before.. I wouldn’t wana sleep in your yurt after 2 bean dishes 😷 😆🤣😂
Looks great healthy meals. One of my favourite salad is roast pumpkin cubes, baby spinach, pine nuts & feta with a drizzle of sweet balsamic 😋 delish you can add rocket if the kids like rocket or just put on your serving. 🛖🍅🥒🥔🧄🫒🧅🌶🍆🥕🧀🧈🍳🥗🐓💖💕
The greenhouse is watered by drip irrigation and we put shade over it a few weeks ago :)
Ive been watching your videos from the beginning...i love the way you do everything.
A really big compost would be good , put it where maartin...can add to it with the digger and turn it over.
With all the strimmed grass and leaves,chicken manure ,coffee grounds,crushed egg shells and a scoop of dirt from the digger you wouldnt miss manure.
Though neighbours and friends may give you some.
Sheep,goat,pig,horse or cow.
It would be far cheaper than buying it...and would add loads to your soil.
If its more than a cubic metre it would be hot enough to kill weed seeds
Dont know if you do this or not, but you can save the seeds from your vegetables and dry them out of course laying separated on a newspaper works great, and they can be used for planting the next tme. If you do that where ever possible it does save some cost

Weeding tomatoes is usually a bad idea. Tomato roots are very shallow and are easy to disturb. After the plants flower you can mulch them to get rid of weeding.
