I forgot to say the larger pieces of olive tree may be used too, by a local wood carver it has a lovely grain we saw someone working on the wood while in Italy. Perhaps there is such a person in Portugal too.

Just knowing, you’re building a home, you’re eating and producing organic and healthy food is very much worth it. The two young “workers” are adorable to watch and see them so happily helping out. 😆 It’s too bad, that the olive oil cannot be distributed overseas, but it’s understandable, due to the expensive shipping costs. I use these radishes and the leaves in stir fries and soups, I also grate them with carrots to make a slaw, I’m going to try the fermentation recipe. The children are growing so quickly, puck looked like pippi longstocking with her braids❤️ I like the crochet blanket.

It's two month after this video of olives harvest, so I hope you have used all the olives branches to mulch and put that on your compost pile. Adding also your chicken manure. And that will give you high quality compost for this year (if you hurry) or next year. Buying a mulcher seem to be a very good investment. cheers.

Great work 👏 It's nice to see you again. I think you will really benefit from having a wood chipper/shredder. You have so many little branches and brushes which are perfect for compost (when you shred them). It can also go to chicken run to keep the ground dry and less muddy in winter.
It always surprises me that people take on so many olive trees without ever done so myself I can see they are a lot of work, but I know they are very forgiving trees and they live for a very long time and travelling through Italy way back 1997 we saw many an example of old trees that had been pruned and kept low to make picking easy, So good for you both, I have never bothered with the water and brine method however, I went to a local market not long after retiring to Castlemaine Central Victoria, Australia where one producer had salt cured olives. I tried it a few years later and it was far more satisfiny. I bought 2x2 kilos of cooking salt and flat plastic container with air tight lid approx 360 mm x 230 x 90 high I put 5mm to 1cm of salt on the bottom on top of that the olives and covered them with the rest of the salt when the salt stained brown I washed the fruit and repeated the process this took a couple of months but I did not cut the fruit if you did it should be quicker. By washing the fruit you wiil remove most of the salt I then put some in bottles with virgin olive oil and herbs . And left them in a dark storage space you could also place bottles in a large pot heavy based with a tea towel on the bottom stand bottles on that and fill with water two thirds of the way up the bottles bring slowly to the boil allow to boil about twenty minutes then turn of the heat.
Love the messy (not really) garden. Better than bare soil and the flowers look lovely. It is amazing how severe farmers prune their olive trees and also grapes and how well they grow afterwards. At least you got some olive oil and will have more next year. Enjoyed the long video.

Hi there... hope you had a very good harvest. I have to say that I need to inform you that it's not the best way of harvesting your olives. The season of the olive is as following: you prune in the winter when the plants are not growing. The resting period so to say. This is from January till March. You could also prune in april and May. All the suckers that you have inside the canopy and the ground ones you prune in august and september. Then October/november is harvesting. If you want an every yr harvest you do not prune in the harvest period. The trees are going to suffer the whole winter and if it is still warm , it will react and make new shoots and leaves that potentially freeze off if you've got frost in your region. If I have learned anything over the last few years it would be that everyone has a different opinion on how to treat olive trees :) We just cut the suckers now because we didn't have time earlier and we had to prune the trees now because otherwise we couldn't get to the olives. Lots of people here prune while harvesting because it's more efficient

Unfortunately a lot of people Here do it as well. Efficient? If that is how you think about it then you've chosen the wrong piece of land. It's about nourishing and taking care for an olive tree. They outlive us. Its almost the other way around if you keep pruning olive trees like that and at the wrong moment of the yr. Anyway, I wanted to help but it's only "my opinion" so I'll leave you in peace. Have fun out there..

I'm sorry to say but I'm telling you. I prune over 500 trees a yr and I've been to the professional pruning school here in italy. They also do a competition here. Ended up as 6th in the region and invided for the national competition... try to invest some time in getting the knowledge you need to go forward. Enjoy

I saw how dangerous the cutting device was before you mentioned your cutting. Isn't it an idea to make a piece of pipe on top of it, and push the olives through with a stick? When that works, you might consider making the pipe longer, and have a thunnel on top. Guess that saves you time.
Sorry you could also move more of the vegetation from around your garden. More of a buffer zone. And not to add even more but you could weed. Ahaha sorry I turned into my father momentarily. Love what you guys are doing. Be good

you should rent a wood chipper and chip all the small branches. You can use the wood chips for mulch in the veggie gardens and on muddy paths.
We'll borrow our neighbour's chipper soon to get that done

Radishes are much milder if you cook them. I think you'll all like them sauteed or in soup, for instance.

When olives get too salty you can almost rebrine them in water to lower the salt content.

Yes tree fruits are good but you can't eat olives, but figs, apples,plumbs,dates,quince and many others can be eaten raw or cooked
I think you have been better served if you had laid down the nets first so when the branches come down you already have captured the falling olives

Hello from france, I did the preserve you are doing, I see you don't weigh the salt, I use to weigh 25gr salt /liter of water for sauer kraut or olives.
I did weigh the salt, scale is just the same color as the pan so you might have missed it :)
