Probably a bit late, but perhaps your heat wasn't high enough? Even though honey is a rather general thing, it still has different types due to different flowers and stuff. Edit: This probably applies to the sugar, too. Slightly higher heat with an adjusted amount of water.

Lessen the honey and be very shy with the water. Medium heat and stir away, this takes a while but turns out well.

A cup its 250 g and it doesnt look as that much so probably its 1/4
Sugar is wrong. Honey is 85% natural sugars and 15% water. You don't need sugar in this recipe.
