    Many people in the coffee world say the “true” crema is a product of high pressure and hot water in the coffee. The high pressure creates micro bubbles which attach to the natural oils in the coffee which creates delicious crema. The industry standard of pressure to create crema is 9 bar pressure. Many high end espresso machine have their own standard or 15 bar pressure and above. Nespresso specifically rates all of their original line espresso machines, including the Citiz to be 19 bar pressure, well above the standard to create crema. Where it gets tricky is the Vertuo machines, since Nespresso uses a combination of high pressure and the centrifusion technology where the capsule is spun rapidly to create the crema. Truly, Nespresso doesn’t disclose how much pressure the Vertuo machines push out so nobody but them truly know of the machines hit 9 bar pressure to extract the the same oils in the coffee as original line of machines. However, in combining the spinning of capsules with high heat and pressure they are able to produce a crema in not only their espresso but the mug sized coffee as well, which is a true innovation in the coffee industry. Is this crema the same as the original line? No, it’s more light and airy, and it doesn’t seem to posses the same oils in the top layer as traditional espresso which is why many purists believe that it may not be true crema. But in all honesty, since we don’t know the bar pressure the Vertuo machines produce we can’t truly know of it is “true crema” or not. In the end, it’s a matter of preference. If you are wanting only espresso drinks or latte, it might be best to get an original line machine. But if you want more variety in coffee sizes or find yourself wanting a full cup of coffee, you’ll truly be amazed at the “crema” that this coffee machine produce in its standard mug coffee. It’s truly astonishing.

      Really appreciate you taking the time to explain that. I knew it was the technology that was causing the difference but wasn't sure exactly what the difference was, will be helpful for future videos 👍🏻Personally I prefer the original line crema but if you want crema/foam on a mug sized coffee then it sounds like Vertuo line is the better or only option. My wife is really happy with the Vertuo Plus and says she doesn't care if it's crema or foam, she just thinks it's nice.

My apologies in advance...I am a newbie here looking to switch from Keurig to Nespresso but, not sure which nespresso machine produces the best “true” crema as opposed to foam. Can you please clarify the machine model you’re referencing when you say you prefer the “original” line crema?

    Chemically speaking they are the same thing.
    one came out from pressure exerted in one direction, which gives more condensed “foam”, means more bonding between the molecules, hence it lasts longer.
    Another one came out from centrifugation force (spinning), less condensed, but more volume, less bondings between the molecules, which is why it decomposes faster.

      Would love to hear if you have picked up your Citiz and Aerocino 4 and how that has worked out for you. I feel that is the direction I may be leaning for my first Nespresso purchase.

      You need to factor in the cost of the pods as Citiz pods can be considerably cheaper than the Vertuo. I cancelled the order for my £219 Vertuo (on offer for £119) because I realised that drinking 5 or more coffees a day could cost £35 per week.

But I was surprised because I thought that Nespresso Origin makes hotter coffee, than Vertuo Plus🤔 I like how do you prepare everything for the “competition”: everything, every detail is symmetrical, in its place, every review is honest.     I will go with the original (citiZ )less créma but better Capsules price from all different brands, and to get a hot coffee I always merged my cup of coffee in hot water before brewing the coffee.

    I have both and the 2 perform very well. Coffee comes hot on both, however the vertuo plus makes a more creamy coffee.

    Very simply crema is the release of CO2 combining with the oils from the coffee, CO2 is produced during roasting and is released on reheating, the water can only hold so much CO2 like carbonating a fizzy drink and the coffee oils act as a surfactant to produce the strong tiny bubbles that’s why an espresso initially looks like all crema but the bubbles rise and separate out to settle on top. Foam is air and no doubt some CO2 using the oils to make froth or bigger weak bubbles. In the vertuo it’s caused by the centrifugal force introducing more air rather than the high pressure in the espresso production.

      Cheers for that, let's see if I have this right then 😅 So centrifusion introduces more air so less concentration of CO2, meaning the CO2 still combines with the oils in the coffee but in a less concentrated way, meaning it's more like foam than true crema? Is that why traditional crema doesn't survive in a mug sized coffee then, because as the amount of water increases it can hold more CO2 and by the end of a mug sized brew under pump pressure there is less CO2 being released anyway and less coffee oils for it to combine with. So the crema that was produced at the start has already broken down by the time it has brewed to a mug size. Hope that makes sense.

      A2B Productions I think that’s absolutely right yes lot less pressure probably a bigger grind in the capsule so more like a filter extraction process but Nespresso probably also rightly feel something on top of a coffee is better than nothing, it looks so much more inviting than a filter coffee and covers things like the scum you get like when you make black tea caused by the added chemicals in water. Yes the bigger cup means more water for the same amount of extracted CO2 so it can hold more also the surface area of the mug is greater so it’s spread out more, there is only so much CO2 in the coffee so it will only ever produce so much crema. Love your videos btw It’s good to hear someone so enthusiastic about pod systems when most people are disdainful 👍🏼

      produces the best crema (as opposed to foam) or..Is the Vertuo Plus a solid choice? I definitely prefer a thicker consistency cream over an airy foam.

    Thanks for your video! Not sure if you'll see this as the video is 3 yrs old, but hoping you can help.
    I've tried using the Creatista Pro and the espresso aroma is amazing but I'm more of a full cup of coffee drinker. I exchanged it for a Vertuo Plus for larger cups. HOWEVER, the coffee aroma is non-existent! Comparing the Original Caramello pod to the Vertuo Golden Carmel, I don't smell anything with Vertuo. I've tried many different flavors; only Rich Chocolate and Tropical Coconut has a hint of aroma.
    Q1) Is it a defect with my specific machine or is it because more water is being used? Do you have this issue?
    Q2) There's a new CitiZ Platinum that has 4 cup sizes, including Americano XL. Should I just go back to the original line, specifically that model?
    I'm new to Nespresso, so there is a lot to learn. 😅 Thanks in advance!

    Well,i had Esenza mini by De'Longhi..used it for a month with different brands of capsules...then machine starts to play up give me little flued on both buttons.... returned it and got citiz by Breville ,yes it has stylish crome color but sad to tell that the coffee it produce it less strong that the previous machine ,Esenza!!!

    Seen afew of your reviews and enjoying them.
    I'm thinking of buying the Citi but just some questions ....
    1) I like a regular Starbucks Americiano (black) .... which is the better machine ?
    2) and which pod is most like that of a Starbucks Americiano ?
    (even in the Starbucks pod range there appears to be a wide selection but which one tastes most like the in-house Starbucks Americano?)

      Some difficult questions there!
      For the first question, I don't think you can buy Vertuo Starbucks pods right now but if there was going to be a compatible pod for Vertuo released in future (before the patent expires) then you'd think Starbucks would be it, as Nestle have the license to sell Starbucks coffee.
      Vertuo machines are aimed more at the mug sized coffee market with more capsule choice there. Original machines are more espresso focused with a few lungo pods too, but an americano is just one shot or more of espresso mixed with hot water anyway. I posted a video a while back experimenting with different ratios for making an americano, in case that's of interest.
      For the second question, I'd imagine the Starbucks House Blend would be a good one to start with. You'd think that would be the regular coffee they use. It is a lungo (110ml) coffee, though, but perhaps you could still top it up with boiling water to make it more like an Americano.
      Also worth mentioning that Dolce Gusto (also owned by Nestle) have a specific Starbucks Americano pod which could work for you.

    Hi thank you for the video. I have both traditional and vertuo machine. Somebody gave me a lot of vertuo cups now but I prefer espresso coffee. Can I drink vertuo long coffee (230ml) as espresso coffee (80ml) or is too strong and not good?

      Hi there, to be honest I think the barcode on the Vertuo machines would prevent you from using the 230ml coffee to brew a double espresso sized shot anyway unfortunately.

      Hi there, they are 80ml espresso cups and listed as 2.7 oz on the Nespresso USA website. They won't take a double espresso though, just a single shot.

      Hi Jeff,the Inissia was my first Experience of Nespresso and it's a good machine.
      The water tank is rather small if your making several coffee's but apart from that I can't fault it.
      Always run a cycle through it first to warm the system up and the temperature of the coffee is piping hot,excellent machine.

      Not perfect was always needing attention but could do 2 coffees at a time

      To be honest they're totally different coffee machines, so it might be worth watching a few more of our videos before buying, just to make sure you're buying the right one for you.
      Personally I much prefer the coffee from the Citiz as I'm more of an espresso and milk based coffee drinker and just think the coffee itself tastes nicer too.

      Hi there, I've not owned a Vertuo Plus Deluxe but from looking online think it's just that the Deluxe has a bigger water container compared the the Vertuo Plus and slightly upgraded design trims. Hope this helps.
