      No, it cools as you move the mitai around and crystallises

    i didn't get the syrup how did it turn white? do I heat?

      Stephany Awino hi there, ok so 1 cup sugar and 1/2 cup water, 1/2 tsp cardamom. Bring to a boil and reduce the heat. Let it bubble until it thickens and becomes like honey.
      Get your mitai, put them in a big pan, pour the sugar syrup. Switch heat on and keep mixing, it will change. If it doesn't just keep going

      Hi tried coating in the syrup but my syrup did not crystalize instead my mitai got soggy n started breaking apart. What went wrong

    This is so odd, so many of your recipes are Indian inspired. "Matai" is the name Indians give for all Indian sweets/deserts. This is why Swahili food is so different from other Africans. This specific recipe is very similar to the specific matai that we call shakarpare (shakar meaning sugar). But, again, some of the ingredients are different.
