Seems like a great starter project! The screws in the carbs are probably JIS they look like Philips heads but you will could damage them if you don't use a JIS screwdriver and apply force too loosen them (that probably happened to yours), drive safe !
I used to have a 1995 GS500E. Great bike, absolutely loved it. The F model was way too much like a crotch rocket for me. Crotch rockets are the one type of motorcycle I want nothing to do with.
I good tip when your cleaning carbs is to use old guitar strings to go through the jets. Just take the outer coil off of em. People use copper wire for the same purpose but sometimes it breaks in jets. Welding tip cleaners are also not a good idea because they enlarge the jet. I love this channel btw.

Those carb bolts you stripped are made of cheese. You aren't a real GS500 owner until you have replaced them with hex heads out of frustration.
Same thing with my Bandit 1200. I knew going into it I'd strip every bolt.
