      Mrs. Crocombe explained in another video that Lord and Lady Braybrooke didn't like strong foods like garlic on their breath when entertaining guests, so she tended not to add those ingredients to the "high table" menu. (On the other hand, they apparently had no problem with having brandy on their breath, based on some of the recipies.)

    As a half Thai-Indian and French I can understand this recipe because of its history and how old it was. But still really don't understand some raging people that crying for authenticity here. Isn't it funny to called some old recipe from more than 100 years ago as "Not authentic" "No way Indian" or "This is not curry"? Said whatever but you can't change the history. This dish still what English people called Indian Curry during that time. The only way they can heard about India is on the news and they called Indian solely because it was originated from. In that era most houses only know Curry from what they've been told. Just for its name, the rice and spices not cooking method or ingredients. Anyone with their right mind would know that this is a historical recipes from England. It definitely not even close to real Indian curry or anything Indian made today so, why need to be mad at?
    And for some people who mad at this recipe but subscribe to Japanese cooking channel. This is exactly how the original Japanese curry was made because they received Curry recipes from England during Meiji era not India. And Japanese still put apple in their curry today, some added red wine, honey and chocolate also.

      Edmund Dior I like to agree. Are used whatever ingredients they had on hand at the time.
      In fact, I want to try this recipe with Martin since I don’t eat beef or Bill and I’m sure it would be a lot of fun to try.
      I happened to be Indian as well.
      It’s very unusual current but I’m sure it would be good but it’s very important piece of history.

      Kairu Hakubi that’s wrong... the curry isn’t the same but that doesn’t mean t isnt curry. Curry is actually made in quite some countries that surround India. Main reason is because the ingredients for “Indian” curry are very common in the area. Also there isn’t just one type of curry, not even in India.

      i mean I guess _kari_ just means sauce, whereas what we call curry powder is called garam masala or some other kind of masala, and tikka refers to bits of meat, but ... the actual names of dishes is kind of adisputed thing it sounds like

    It's pretty good. Mildly sweet and tender. Mine turned out sweeter than the original recipe, because I doubled the apple and cucumber amount. I used two ambrosia apples, and two overgrown pickling cucumbers. If you like curried chutney or otherwise like both chutney and curry, this Victorian recipe ought to be to your tastes. That said; this recipe depends upon the quality of curry powder used. I went for a blend similar to Japanese yellow curry powder (homemade), and it turned out wonderfully. The telltale "cucumber" taste is cooked out, so, if you want, you can substitute in squash. If you want to play it safe, zucchini and yellow squash are obvious choices for substitution.

      April Bennett Ah great suggestion... Stewed Cucumbers sounds very odd to me but Zucchini sounds better :)
      Tend to like cucumbers for their crunchiness and it probably turns mushy when stewed so they basically loose their best quality imo :/

      Just so that all the Indians know, curry is a native English dish. It had nothing to do with India to begin with. There is authentic curry as shown in the video, and there is Indian curry.

      @not gonna as far as i remember the dish of curry is a very english thing, created with the spices imported from india. since curry is a blend of spices not one on it's own it's very similar to indian dishes that have similar flavours, but the stewed meat dish with veggies over rice is english

      second, that curry recipe is weird. Apple in a curry? To be honest, I never tasted Indian curry, but I have made myself an Indonesian curry, which I would think would be pretty similar, maybe a slight difference, but not THAT curry recipe.

      Even today onions and garlic are not liked in the aristocracy of Britain. They are not even used in Buckingham palace. The smell is too strong and is considered "off putting" because it makes your breath smell bad. The Queen entertains every day and things like that are important to her.
      Plus, your cuisine is influenced by your culture and where you live. Colder, wetter places have never used a lot of spices. They were expensive to import. Even something as basic as a pound of nutmeg would cost as much as 7 fat oxen. So even the rich only used them when entertaining. Since they weren't accustomed to it even a little bit would be seen as extravagant. A well off family could pay their daughter's dowry in peppercorns. They were used instead of currency. So the culinary culture in Britain evolved so that spices were minimal. Food is very engrained in culture. Just because you have access to new spices does mean that your diet will change all that much. People prefer the food they ate in childhood. Recipes are passed down for generations. You don't just change those. The new items are eaten often as novelty and it takes generations for that to change.

    I made this today and the family loved it! I'm such a huge fan and wanted to make the dish just as Mrs. Crocombe did. Even skipped the garlic and didn't drain the butter! At first we were all skeptical about the apple and cucumber because we're not used to having those in stews but the flavors all worked together beautifully in the end. Next time I make it though I'm using half a tbsp of salt instead of one. I also marinated the meat in the curry powder overnight before I cooked it. So good!

    This is wonderful. An authentic victorian curry for people who didnt like highly spiced food, but were eating it because it had become fashionable to eat it. I chuckled all the way through.

    Truthfully many of these recipes I would not eat in my regular life. That said, if I found myself at Mrs. Crocombe's table, I'd probably try each dish with a smile. Even the turkey one slathered in mayonnaise! Echoing the sentiments of many, this NEEDS to be a half hour series. I'm thinking BBC and for us Americans PBS.

    As an Indian I know this isn't the Indian curry but yeah I can understand how the old British people would have made their own version of curry n named it Indian coz of the spices. Anyways, it's good to know another way of making a curry. :)

    Its authentic receipe.. my great great grandma passed on the recepie ..she used to add pears.. ( she learnt from her english friends living in india then)
    To this day ..we cook with pears..
    It really tastes good..the taste of meat and sweet apples or pears.

      Using fruits with meat is actually really nice. A lot of recipes still use this combination. Some Korean sauces are similar.... even in chinese traditional medicinal soups, we use fruits as well to give it a kick. You can taste the fructose.

      She's showing how people in England in the 1800's would have made curries at home using ingredients they had to try to copy the curries they had while visiting India because the father or someone was a soldier or missionary who had been there.

      It's always with any 'traditional food' when it was brought to another places with different resources and culture.
      That's why personally I have no problem with the recreation of 'pizza', 'curry', 'rendang', etc, as long it didn't claim itself as authentic.

    All those banging on about how in India we would never use beef or veal in a curry should Remember that when this was set - 1880 ... Pakistan Bangladesh and "india" were all the same country -and Victoria was empress of it all .
    I'm sure that in Pakistan or as then would be the northern region of India including the then Indian cities of karachi rawalpindi etc beef was and very much is used in Indian or what is these days pakistan .

      South Indians use beef in their curries. Beef is another "gift" that cattle give us, besides milk.

      Aeric Abison In Southern India, Beef is only prevalent in Kerala, and historically, Hindus, even in Kerala, did not consume it. I guess because of modernisation and Communist areligious ideals , it got more acceptance.

      yoginc I haven’t read any ‘Hindu’ scriptures so don’t know if your claim is true. But I do know this that Cow slaughter wasn’t practiced since ancient times, as was mentioned by several foreign travelers like Al-Biruni.
      Also, Hindus aren’t like Abrahamics. We aren’t so obsessed with ‘scriptures’. Majority of us inherit our traditions and knowledge from our Gurus and Elders and subsequently, we pass it down to the next generation.

      passionskayandmiguel not really, Karimi is actually a medieval English word meaning to cook that is a historical fact from the earliest official cookbooks even before colonizing India, and while we’re at it did you know that Indian women never wore petticoats or blouses underneath there sari until after colonialism because they wanted to imitate the English ladies wearing their dresses with their petticoats and bodices underneath?

      It’s pretty normal to add apple in Japanese style curry, taste nice too. I personally prefer Japanese style curry than Indian style curry.

    This reminds me of the "curry" my mother used to make for our family in the 1960s - 70s. Mum would buy something called 'curry powder' and basically coat some form of beef in just the way dear Mrs Crocombe demonstrated. Mum would boil a large pot of white rice and for some reason, throw in a heap of sultanas. They were my favorite part. Curried Sausages were made similarly and are wonderful in winter with a heap of mashed Agria potatoes, with a parsnip or two mashed in. Not what I really think of in terms of Indian Curry but then, neither are the creamy gravied dishes that most (so called) Indian restaurants sell, either.

    I don’t think people understand the history behind this recipe. Obviously it’s lit accurate.
    It was made in Victorian England where they actually don’t have access to authenticity of curry like we do today.
    Everything is passed by word of mouth. Also Victorian England got some weird food too lol

    By far I have loved the Victorian Way videos because they're just lovely and the way they've shot the video is so breathtaking. I'm definitely looking forward to more recipe videos because every recipe in the Victorian Way am I cooking after 137 years (it seems Mrs Crocombe joined Audley End House in the 1880s according to one of English Heritage's videos). I truly respect Mrs Crocombe's effort and love for cooking. PS I love her accent; it's so good.

      And one would think this is common knowledge, yet people are always confused when I mention apples or raisins or other fruit as ingredients for my favourite savoury autumn and winter dishes 🙄 Like I love my carott apple soup with raisins and a bit of cinnamon and people who just hear the recipe are like is this dessert 😂 But once they try it they love it too.

    As a Thai, I don’t really surprise of differences about curry being made by Mrs Crocombe. In Thai dishes alone, there are more than hundreds types of curry which differ from just the meat being used to the spices themselves. Also in those curry, there are dishes we called ‘Kaeng Karee,’ which literally translated to curry curry or curry soup. And yes, we have several versions of it: namely Thai version, Indian version, Chinese version, and Japanese version. Yet, Japanese Curry has many recipes being cooked here.

    Not enough people seem to understand that these videos and the recipes within are based off the manuscript cookbook by the real life Cook Crocrombe. It's all set in a specific year because of how much info they have from census records and a fire.

    Being an Indian, I have never seen meat curry to be cooked with cucumber & apple!!! We love to cook meat with ginger garlic onion & lots of spices!
