How to Make Chocolate Pudding - The Victorian Way

    Mrs Crocombe is making a treat for the servants - her recipe for steamed chocolate pudding.
    INGREDIENTS
    225g chocolate
    150g breadcrumbs
    1/2 pint milk
    150g butter
    120g caster sugar
    3 eggs
    METHOD
    Melt the butter and chocolate together, and then add the breadcrumbs and the milk. Keep stirring it over the heat until it becomes thick. Separate the eggs and cook up the yolks with the sugar, then combine this with your chocolate mix. Whisk your egg whites and then fold them into your chocolate batter. Line a pudding bowl with butter, and pour in your mixture. Add a circle of baking paper on top, and secure some cloth over the top using twine. You can bring up the edges and tie them into a handle. Place it into a pan and fill with water until it reaches halfway up the bowl. Steam for about an hour.

      Servants are still a thing, in some developing countries. My (late...) grandmother on mother's side was from Nepal. She had a servant, a man older than 50, who served her family, full-time (and actually full-time, lived in the house and could be called to do something any time) since he was 14... that always seemed, very strange, to me.
      My grandmother did chose to leave him with the house, which he lived in as a servant, all his life... which I thought was a nice conclusion to the whole affair.

    I tried this recipe and my 70 yo mother-in-law was very pleased with the result. She said it tasted just like her grandmother used to make. Her grandmother got the recipe during colonialism era in our country. Thank you English Heritage!

      @@barbraseville8984 She is a historical interpreter. However, The Braybrookes and Mrs Crocombe were real people. The real Mrs Crocombe was the Braybrooke's cook in 1981 and worked at Audley End House when the Braybrookes were in residence.

    A tip for steaming the pudding if you put a small ceramic plate in the bottom of the saucepan you will here it rattle slightly as the water boiling if the plate stop rattling it means the water needs to be topped up

      @@somethinggood9267 Bloomed is when the fat separates from the cacao solids and seized is when water/moisture is introduced while the crystals are forming. Usually if you see ashyness on chocolate it is seized, if you see little spots or air bubbled, its bloomed.

      @@megaraitei No. For chocolate to set, the crystals have to form in a specific way for it to stay stable at room temp. If it's seized the chocolate will be gritty, almost as if it has a bit of sand in it. And if it's Bloomed, it'll taste off in flavour and will not melt as easily.

    I tried to cook this one (with modifications on the materials and equipment i used), though i only cooked 1/3 of the entire recipe; plus i prepared homemade breadcrumbs since i have a few stale loaves bread on hand. I cooked them on moulds that are good for single serving, covered them with foil, and steamed on a bamboo steamer.
    And it actually turned out amazing. The texture is like a cross between bread pudding and cake; of course chocolatey, and the sweetness is just right. It is indeed delicious while it was still hot, and as well when it cooled to room temperature.
    One tip though, the chocolate to be added does play a role in the overall flavor; indeed use a good quality one. I tried using compound chocolate (chocolates containing vegetable oil) to compare, it was still good but the depth of the chocolate flavor won't be the same like those chocolates containing cocoa solids (i suggest at least 60-70%).

      You should try making this recipe, it's also good to serve this for Christmas season (i made one last year, and all the kids finished it in one go)

      @@RingshadowCat If you are going to follow the recipe, the exact way it is prepared and done, it will probably take about 1 hour (as per mentioned in the instructions of Mrs. Crocumbe).
      But from what i did, since i modified some equipment to steam bake the pudding, i did the "skewer test" instead. If you are doing the smaller batches (small ramekin size), check at the 20 minute mark then do the skewer test. If you do a bigger batch, expect to have it longer, probably at 50 to 60 minute mark.
      Everything depends on timing and the cook's instincts. Hope this helped you.

      Not "just" a cook in a Grand Victorian households the Cook was one of the most important members of staff along with the Butler and Housekeeper. That's why Cooks were always referred to as Mrs even though the majority were unmarried they were given the status of a married woman.

      Calming, relaxing, interesting to watch. It grounds you, and makes you feel happy. Though tbh this is one of the easier and more affordable bakes so I really recommend you try to make it some day.

    For me these clips are so much better than asmr videos. I have sleeping problems, But they were not helping. Whispering and the sounds of strangers' breathing makes me feel creepy😞 But these are different. Natural and relaxing. I don't know why but helps me to sleep :) Thank you💕

    The thought that breadcrumbs are included in this mix creeped me out the first time I watched this, after I made it, I realised it was a great addition. It gave a lot more of a spongey texture to the cake, i definitely recommend adding breadcrumbs!

    So I tried this. I have this habit of using my oven to store pots and pans when I don't use them. When I put the pudding in the oven, I accidentally left a rolling pin in there. I was out a rolling pin but the pudding tasted wood smoked and amazing. Now I am trying to figure a way to get the taste without burning a rolling pin

    Just made this recipe today, it came out amazing, chocolaty, rich, fluffy and soft. I did ad a bit of salt (it brings out the flavour of the chocolate and cuts through the sweetness).

      Well, if they're going for verisimilitude, it would/should be the Queen's English of Victoria, as much of it would generally be spoken by a woman in Mrs. Crocombes' position/situation. "Higher end", indubitably, but not so much as to distance herself completely from other servants, vendors, civil servants, or beloved family members. Even now, in the U.K., your accent says much about you, whether there is any truth in the telling at all.

      @@psammiad However, in England the linguistic standard is monarch-based, regardless of said monarchs' mother language. It's either the Kings' English or the Queens' English, depending on whether England has a King or Queen at that time. Which does beg the question, why isn't Victorian English at least German accented? Considering how long Victoria reigned, you would expect more German influence on the English language. Certainly, the phrase associated with Victoria, "We are not amused" sounds much more ominous and threatening in a German accent. It sounds like a line from a WWII movie, spoken by a Nazi torturer, don't you think?

      I guess it goes to show just how words for things have changed. What was known as pudding then (or rather "Baked Pudding") is now commonly considered more of a brownie, while what we consider general pudding today is more akin to custard, or "Cream Pudding".
