- Baked Ziti
Ingredients for mini meatballs:
- 500g (1.1 lbs) pork mince
- 500g (1.1 lbs) beef mince
- 25g (0.88 oz) breadcrumbs
- 1 tbsp (0.5 oz) ground fennel seeds
- 2 eggs
- 12g (0.42 oz) salt
- 3 cloves garlic, grated
- 40g (1.41 oz) grated Parmesan cheese
- 3 tbsp olive oil (for cooking)
Method:
1. Place all ingredients (apart from the olive oil) into a bowl and mix well.
2. Roll into small balls, the size of olives, and place on an oiled baking tray.
3. Bake in an oven preheated to 250°C (482°F) for 4-5 minutes, or until the meatballs start to brown.
Ingredients for Baked Ziti:
- Meatballs from the above recipe
- 4 cloves crushed garlic
- 3 tbsp olive oil
- 700g (1.54 lbs) passata sauce
- small handful of torn basil
- 5g (0.17 oz) salt
- 1 packet ziti pasta
- 250g (8.81 oz) ricotta
- 50g (1.76 oz) grated Parmesan
- 100g (3.52 oz) mozzarella
Method:
1. Put a large pot of salted water on to boil.
2. In a large saucepan, add the olive oil and garlic, and sauté for 2-3 minutes on medium heat.
3. Next, add the passata, basil, and salt, and simmer on a medium heat.
4. While that is simmering, cook the pasta in boiling water, only cooking it 70% of the way as it will continue to cook in the oven.
5. Drain the pasta well, reserving around 1 cup of the pasta water.
6. Add the pasta, a cup of the pasta water, and meatballs to the tomato sauce and mix well.
7. In a baking tray, layer the pasta in sauce, then sprinkle 1/3 of all the cheeses on top and repeat, finishing with a layer of mozzarella.
8. Bake at 180°C (356°F) for 35-40 minutes, and it's ready to serve!

I tend to slice up sweet and/or spicy Italian sausages into 1-1.5” pieces, brown those up, and then mix those in prior to baking. And can’t forget those meat juices - mix those in too!

Hey Andy! Huge fan of you and your content, but not usually of baked ziti. In the past, I’ve found it dry and underwhelming, but as you do, you’ve made it look delicious! I’ll have to make this recipe for myself, rather relying on takeout or a restaurant.

Never seen it with meatballs before! hrmmm! I just brown the meat with an onion and make a sauce with passata and canned tomatoes, some additional herbs and tomato paste and some garlic.
I actually split the layers with a couple of different cheeses like burrata (vs. ricotta or mascarpone, provolone, low moisture mozzarella and pecorino.
I also find it better on day 2!
I wluld say, that Im first. But I would say, that is a nice dinner
